Classic Fettuccine Alfredo with Sausage. It’s been a while since I made some pasta, but because my youngest daughter was craving for it, I made her favorite Fettuccine Alfredo with Sausage for dinner.ย ย It’s a creamy pasta dish made with half-and-half, grated Parmigiano- Reggiano cheese, butter, and smoked chicken sausages.

She wentย crazy over it.ย  She couldn’t stop complimenting me on how great it turned out.ย  I should makeย this dishย every night for her.ย  I felt so loved!ย  Lol…

I decided to take my mother’s original recipe and recreate it, making it healthier with less fat and lower in calories.ย  The original recipe calls for heavy cream and Italian pork sausages which contain aย lotย of fat.

This is aย quick and easy dish; it took about 15 minutes for meย to get it to the table.

Classic Fettuccine Alfredo with Sausage.

Looking through theย frozen meat section at theย supermarketย I found chicken sausage by Chef Bruce Aidells.ย  Thisย sausage isย smoked and already fully cooked.

And the best part, it was labeled “All Natural”- Italian Style, Smoked Chicken Sausage with No nitrates, No hormones, No MSG and Gluten-Free!ย  It sounded so good, I had to try them.

These smoked chicken sausages tasted like the Italian style, because it’s made with mozzarella cheese and spices, and had a mild spicy kick to it.ย  Plus, they worked very well with this recipe, adding a lot of flavor to my creamy Classic Fettuccine Alfredo.

You may even make this classic dish using Italian pork sausages, but you will have to fully cook them before adding them to the Alfredo sauce.

Anyway, to my surprise,ย my daughter Lizzy couldn’t tell the difference andย said it was “the best pasta dish she has ever had!”

I have to make it again, so I can keep getting those compliments from her.ย  Oh, what a mother does for love!

Ingredients needed for Classic Fettuccine Alfredo with Sausage:

  • 4ย Tbsp. (1/2 stick)ย unsalted butter ( I used smart balance butter)

  • 12 ounce (4 links) Italian Styleย Smoked Chicken Sausageย with Mozzarella

  • 1/2 pint half-and-halfย cream

  • 1 pound of fettuccine pastaย or GF fettuccine

  • 1/2ย cup freshly grated Parmigiano-Reggiano cheese

  • 2 tsp. Italian parsley, fresh or dried

  • freshly ground pepper

  • freshly grated nutmeg

Open package of smoked chicken sausages, sliceย each sausage lengthwise, then chop intoย small pieces,ย  about 1/4 to 1/2ย of anย inch.ย  Set aside.
In a large pot, ย bring water to boil for the pasta.ย  Add 2ย teaspoons of salt to the pasta water and follow the directions to cook the pasta, or untilย al dente.

In the meantime,ย heat over low heat,ย add chopped sausages and melt butter in a large non-stick skillet for 1 to 2 minutes.
Add the half-and-half cream to the butter andย stir to let it warm, about 2 minutes.

Drain fettuccine pasta and gently transfer to the skillet with the creamy mixture.ย  Mix thoroughly with the butter and cream mixture, keeping the skillet over the lowest heat.ย ย Add in the Parmesan cheese and parsleyย and toss until sauce slightly thickens.ย ย Season with fresh pepper and nutmeg to taste.

If you prefer creamier, add more half-and-half.

Remove from heat and serve immediately with additional grated parmesan cheese at the table.

    With reference of your article we have the pleasure to tell you the history of our grandfather Alfredo Di Lelio, who is the creator of โ€œfettuccine allโ€™Alfredoโ€ in 1908 in restaurant run by his mother Angelina in Rome, Piazza Rosa (Piazza disappeared in 1910 following the construction of the Galleria Colonna / Sordi).
    Alfredo di Lelio opened the restaurant โ€œAlfredoโ€ in 1914 in a street in central Rome, after leaving the restaurant of his mother Angelina. In this local spread the fame, first to Rome and then in the world, of โ€œfettuccine allโ€™Alfredoโ€.
    In 1943, during the war, Di Lelio sold the restaurant to others outside his family.
    In 1950 Alfredo Di Lelio decided to reopen with his son Armando his restaurant in Piazza Augusto Imperatore n.30 "Il Vero Alfredo" (โ€œAlfredo di Romaโ€), which is now managed by his nephews Alfredo and Ines, with the famous โ€œgold cutleryโ€โ€ (fork and spoon gold) donated in 1927 by two well-known American actors Mary Pickford and Douglas Fairbanks (in gratitude for the hospitality).
