Dijon Salad Dressing

We tried to mimic a restaurants Caesar’s salad dressing, we instead came up with a different flavor that was so delicious and so different from your classic Caesar’s dressing.  Amazingly, it turned out better, and we happen to LOVE it!  It’s a new take on a Caesar’s dressing with a twist- we like to call it a Dijon Salad Dressing!

A simple combination of mayonnaise, lemon juice, red wine vinegar and classic yellow mustard is what we used (and was available at the time) to make this dressing. And to our surprise…it turned out really good!

Creamy and tangy delicious with every bite! Makes a perfect dressing anytime.  The flavors just burst and tingles in your mouth! This recipe is perfect for a small salad for one or two servings.
If you double this recipe you can place the remaining dressing into a small bottle or container, refrigerate and stays fresh up to 3 days.  Try it!

Dijon Salad Dressing

  • 2 Tbsp. mayonnaise
  • 1 tsp.  classic yellow mustard
  • 3 Tbsp. extra virgin olive oil
  • 1 Tbsp. red wine vinegar
  • 1 Tbsp. fresh lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. garlic powder
  • 1 large bulb Romaine Heart lettuce, rinsed
  • 2 to 3 Tbsp. grated parmesan cheese
  • 1/2 cup croutons

Using a coffee mug or small mixing bowl, combine the first 8 ingredients, (hold the lettuce, croutons and Parmesan cheese).
Taste the dressing and adjust the salt, if needed.

In a large bowl, combine lettuce, croutons and dressing.
Top with grated Parmesan cheese and toss gently to combine. Serve.

Serves 2 to 4

Very nice – I almost always use Dijon on my dressing but have never combined it with mayo – going to try this for dinner – thanks!
