EASY Roasted Artichoke Hearts with Lemon-Garlic Aioli. Frozen artichoke hearts are defrosted and roasted with 2 simple ingredients.  Then they are served with an easy lemon-garlic aioli that is flavorful and fun for dipping!  These artichoke hearts make the perfect snack or appetizer while dinner is getting ready!  Healthy, delicious, and requires no prep work at all!

But not all vegetables need a lot of jazzing up – at least not these artichoke hearts. They’re prepared in one easy step and once you try them you’ll agree they deserve a spot on the table all year round!

Easy Roasted Artichoke Hearts…

These are roasted in the oven or (in the Air-fryer) with only salt, pepper, and a drizzle of extra-virgin olive oil; and served with a side of Lemon-Garlic Aioli for dipping!

And yes, the outcome is always delicious and perfect every time!

Crispy on the outside, tender on the inside with every bite. We love eating them alone as they satisfy the salty-savory flavor we crave from time to time.

But if you have picky eaters in the family (like I do) then I suggest adding a flavorful lemon-garlic aioli dip next to it.

Once you dip into this lemony aioli, these artichoke hearts will become even more amazing!

 

How to Make Easy Roasted Artichoke Hearts: (*full recipe card below!)

  1. Simply take packages of frozen artichoke hearts and leave them out on the counter to defrost.
  2. Then scatter them onto a roasting pan, and gently drizzle some salt and olive oil over them.
  3. Next, roast them for 25 minutes until they are slightly charred, golden brown, and crispy.   YUM!

Artichoke hearts turn out perfect every time I roast them this way. They make a wonderful appetizer, or even a great snack when you need one.

Where can we find artichoke hearts?

  • You can find artichoke hearts in the freezer section at every supermarket.  Plus, when they go on sale, I double up on them.
  • I love keeping these packages of frozen artichoke hearts in my freezer.  I never know who is coming over. 
  • They’re so convenient to whip up and serve with a glass of wine, especially when friends come to hang out.

EASY Roasted Artichokes with Lemon-Garlic Aioli ~ make the perfect snack or appetizer while dinner is getting ready! Healthy, delicious, and require no prep work at all!

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 2 ( 9-ounce) packages frozen artichoke hearts, defrosted
  • 1 to 2 Tbsp. extra-virgin olive oil
  • 1/4 tsp. kosher salt
  • optional: fresh black pepper, to taste
  • olive oil cooking spray

Creamy Lemon-Garlic Aioli:

  • 1/4 cup light mayonnaise
  • 1 tsp. minced fresh garlic
  • 1 Tbsp. lemon juice
  • 1/2 tsp. grated lemon zest
  • 2 tsp. extra virgin olive oil

Lemon-Garlic Olive Oil Aioli:

  • 1/4 cup extra virgin olive oil
  • 1/2 tsp. grated lemon zest
  • 1 tsp. minced fresh garlic
  • 2 tsp. lemon juice
  • 1/8 tsp. fresh cracked black pepper
  • dash of salt

Instructions

  1. Preheat oven to Roast at 400 (204.4 C), or at 425 degrees F (218.3 C).
  2. Lightly spray a large roasting pan with cooking spray. Spread artichoke hearts in a single layer. Drizzle with extra virgin olive oil and some salt over them.
  3. Place the pan on the center rack in the oven. Roast for 25 minutes. All ovens vary, so keep an eye on them. They should be done when they are golden brown.
  4. Remove and transfer to a serving dish and serve with lemon-garlic aioli on the side.
  5. Choose one or the other aioli. Both are delicious with these hearts.
  6. Serves 6

Creamy Lemon-Garlic Dip:

  1. Combine all the ingredients in a small bowl. Transfer to a small dip dish.
  2. Serve dip with warm artichokes hearts.

Lemon-Garlic Olive Oil Dip:

  1. In a small sauté pan, add all the ingredients and heat over low heat for about 2 to 3 minutes. Transfer to a small dipping dish. Place it in the center of the serving platter with warm artichoke hearts and serve immediately. Best when served warm.

  1. How do guests pick up the artichoke to dip them? Seems like they would slide off a toothpick. Thanks!!

    1. Hi Susie,
      Your guests can spoon (or with a fork) a few artichokes into their own plates, and spoon some of the dips as well. Then they can easily use their fingers to pick up each one and dip it from their own plate. This is a safe way to serve appetizers these days during Covid. I hope this helps! Have a great evening. 🙂

  2. I made these. If you want to get that beautiful browned look, you need to increase the temp to 450.
