Grilled Ginger-Lime Chicken Kabobs

Grilled Ginger-Lime Chicken Kabobs are marinated with fresh ingredients, including ginger, herbs, and veggies, then grilled to perfection! These chicken kabobs will burst with refreshing flavors in every bite.  Make ahead with an easy marinade, then grill them when you’re ready, will guarantee them to turn out moist, tender, and succulent every time!

The peppery-sweet ginger, along with the tang from lime juice, and fresh cilantro are the key ingredients to these tasty chicken kabobs.

These grilled ginger-lime chicken kabobs are very easy to prepare.

I decided to marinate chicken pieces in the morning, allowing the marinade to do its magic.  Then I assembled the kabobs right before they went to the grill.

The marinade includes a mixture of fresh cilantro, freshly grated ginger, lime juice, and honey in a mixing bowl, and marinated for a few hours.

Next, threaded the skewers and grilled them.

Adding some fresh veggies not only adds a vibrant color to these kabobs but also additional flavors to the chicken.

There was enough for everyone to have one kabob or two. Everyone enjoyed them very much, even the little ones loved them too!

Best of all, grilling the kabobs took less than 10 minutes.  It was not only easy, but a pleasure to grill them, making dinner a breeze!

How to Make our Chicken Kabobs?

Ingredients for Grilled Ginger-Lime Chicken Kabobs:

  • 4 boneless skinless chicken breasts- cut into about 2-inch pieces
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tsp. lime zest
  • 1/2 cup lime juice
  • 3 Tbsp. honey
  • 2 Tbsp. grated fresh ginger
  • 2 Tbsp. extra virgin olive oil
  • 1-pint grape tomatoes
  • 1 green pepper- cleaned, chopped into 1-inch pieces
  • cooking spray
  • 12-inch skewers

EASY Directions to Make these Chicken Kabobs:

1.  FIRST, PREPARE THE CHICKEN: Rinse, drain, and place all chicken pieces into a large zip-lock plastic bag.

2.  MAKE THE MARINADE: In a medium bowl, whisk together the next 9 ingredients.  Pour the chicken into the plastic bag.  Seal the bag and turn a few times to coat the chicken. Place the bag in a shallow dish.  Marinate in the refrigerator for at least 1 hour or more.  Turning occasionally.

3.  MAKE THE KABOBS: Begin to thread the skewers with the chicken goes on first, then add green pepper and then a grape tomato.  Repeat 1 more time, and finish with chicken on top.  You should have at least 3 pieces of chicken per skewer.  Continue to thread all the skewers.  Place each skewer onto a platter.  If you have any grape tomatoes left, add them as the tops to some of the skewers.

4.  PLACE KABOBS ON A PLATTER: When all kabobs are ready, take the remaining marinade in the bag and pour it over the kabobs.

5.  READY TO GRILL: Heat grill to medium heat.  Lightly spray gas or charcoal grill with some cooking oil. Place the kabobs directly on the grill. Grill kabobs with the cover closed for about 3 to 4 minutes, and brush once with some of the marinade.

6.  TURN KABOBS OVER: and brush again with the remaining marinade (then discard the marinade). Continue to grill for additional 3 to 4 minutes, or until the chicken is fully cooked. Remove and let stand for a few minutes before serving, allowing metal skewers to cool down to handle.  Serve warm.

  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. cayenne pepper
  • 1/4 cup chopped fresh cilantro
  • 2 tsp. lime zest
  • 1/2 cup lime juice
  • 3 Tbsp. honey
  • 2 Tbsp. grated fresh ginger
  • 2 Tbsp. extra virgin olive oil
  • 1-pint grape tomatoes
  • 1 green pepper- cleaned, chopped into 1-inch pieces

  4. Place all the skewers onto a large platter or foil tray. Take the remaining marinade in the bag and pour it over the kabobs.
  5. READY TO GRILL: Heat grill with medium heat. Lightly spray the grill (gas or charcoal grill) with cooking oil. Place the kabobs of the grill. Grill kabobs with the cover closed for about 3 to 4 minutes, brush with some of the remaining marinade.
  6. Turn kabobs over and brush again with some of the remaining marinade. Then discard the leftover marinade. Continue to grill for additional 3 to 4 minutes, or until chicken is fully cooked. Remove and let stand for a few minutes before serving, allowing metal skewers to cool down to handle. Serve warm.
  7. Yields: 12 chicken kabobs

  1. What great flavors! When I do kabobs I tend to go more in the Mediterranean direction, but Iโ€™m not sure why. Maybe because the first ones I ever made were Greek. But these sound fabulous!

  2. Anytime I see ginger, lime and cilantro together, I KNOW that the recipe is a winner! I've never thought of marinading chicken with them, but is so perfect! I hope that I will make this VERY SOON now that the hotter temps are coming and grilling out keeps the heat out of the kitchen! Nice to be back from Italy and catch up with all of your yummy recipes!

  3. I love kabobs and all the ingredients listed. This sounds perfect for a weekend dinner. We went camping all weekend and both recipes I planned to blog this week were flops! Sometimes it works – sometimes it doesn't. These were obviously a home run!
