EASY Pumpkin Muffins with Icing.  Fall is a wonderful time for warm muffins! These are super moist pumpkin muffins made with warm spices and topped with sweet icing and a sprinkle of ground cinnamon on top.  And as we approach Thanksgiving, I can’t stop thinking about having some warm and moist Pumpkin Muffins with Icing with our favorite coffee!  Oh, what could be better? This is a quick and easy recipe I like to share with you! Oh and so Delish!

 

A few years ago I posted  How to Make Fresh Pumpkin Puree And right around this time before Halloween, some of my pumpkins come back into the kitchen to get worked on.  Yep.. I never let a good pumpkin go to waist!  The large ones that get carved into spooky faces are the ones we take the seeds to roast and serve them as a healthy snack.  The small ones are baked for fresh pumpkin puree.

I LOVE this time of year when I can make and freeze home-made pumpkin puree, knowing that I will have it on hand especially for our annual Thanksgiving Feast.   And of course, if I need to, I will keep a can of pumpkin around (even though it’s not my favorite) just to have it on hand.

Easy Pumpkin Muffins with Icing is made in One Bowl and needs only a good whisk to blend all the ingredients, then bake for 25 minutes!  It is that easy!  Plus, the icing is only 2 ingredients!

An old recipe given to me more than twenty years ago from my sons nursery school teacher.  Only recently, I modified the original recipe a little by omitting some of the sugar and some of the butter.  And as you may already know,  we are always trying to lower some of the calories and fat from the original recipes, but without sacrificing taste and flavor.

Anyway, after baking these pumpkin muffins for so many years, I am happy to finally get the chance to share this one with all of you!  I hope you will enjoy this one as much as we do!

EASY Pumpkin Muffins with Icing
  • 3 1/2 cups flour
  • 2 cups light brown sugar
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 3/4 cup melted butter
  • 2 eggs
  • 2 cups mashed pumpkin
  • 2/3 cups water
  • 1 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 2 tsp. ground cinnamon

Mix all dry ingredients together in a large mixing bowl.
Make a well in the center, add pumpkin puree, eggs, water and butter.

Mix well with a large spoon until well blended.  Then whisk for a few minutes more.

Using a muffin pan lined with paper,  fill each muffin cup 3/4 with the mixture. Gently sprinkle with some cinnamon on top of each muffin.

Preheat oven 350 degrees. Bake muffins for 25 minutes. Allow to cool before icing the muffins.

Basic Icing:
  • 2 cups confectioners sugar
  • 2 Tbsp. plus 1 tsp. of milk

Stir together in a small bowl, and spread icing on muffins using a knife.
Lightly sprinkle some ground cinnamon over the muffins.
Store in an air-tight container or refrigerate.  You can freeze them too!

Yields: 24 to 26 Muffins

Ingredients
  • 3½ cups flour
  • 2 cups light brown sugar
  • 1 tsp. salt
  • 2 tsp. baking soda

  • ¾ cup melted butter
  • 2 eggs
  • 2 cups mashed pumpkin
  • ⅔ cups water
  • 1 tsp. ground cloves
  • 1 tsp. ground nutmeg
  • 2 tsp. ground cinnamon
Simple Icing:

    Forget easy- that is great and all but the fact is that they look so dang irresistible and delicious that i would have to make them even if they were hard:)
