  • And it reheats beautifully!
  • Leftovers are great the next day, with a loaf of Italian bread to make sausage and pepper sandwiches. YUM!

Overview of Ingredients Needed:ย  (*full recipe card below!)

  • ONIONS: you will need about 2 to 3 large sweet onions.
  • PEPPERS: also, you will need 28 -ounce Mini Sweet peppers, (OR 4 large yellow peppers & 3 large reds).
  • SEASONINGS: you will need some garlic powder and salt.
  • ITALIAN SAUSAGE LINKS: you will need about 5 to 10 links of Sweet Italian Sausage, ( I used Trader Joe’s).
  • LEMON: one lemon, for fresh lemon juice.
  • OLIVE OIL: choose extra virgin olive oil to get the best flavor with this recipe.

Directions To Make it…(5 Easy Steps)

STEP 1.  PREP THE VEGGIES: Slice the onions and peppers and transfer them into a large roasting pan.

STEP 2.  BROWN THE SAUSAGES: Next, there are two ways you can brown the sausages on all sides but not cooked entirely through.

  • One way is toย quickly grill the sausage links on your outside grill to brown them, or in a skillet on the stovetop for a few minutes on all sides.ย  Squeeze lemon juice over them while you are grilling them (see our notes in recipe card).
  • The second way is to place them into a “second” baking pan, and pop them into the oven for a few minutes until they are partially cooked and golden.

STEP 3: SLICE THE LINKS: Then, remove and slice them into thirds and toss them into the roasting pan with already chopped onions and peppers.

STEP 4.  SEASON EVERYTHING: Drizzle extra olive oil over them along with some seasonings, and toss everything to combine.

STEP 5. BAKE IN THE OVEN: Bake for up to 50 minutes, until the peppers are softened and fully cooked.  Then remove and serve!

Notes and Tips…

  • Partially grilling sausages on the barbecue (or in the oven) helps remove some of the fatty greases; therefore, making this sausage casserole less greasy and tastier.ย
  • This will ensure the pork sausages are fully cooked, tastier, and leaner for the whole family to enjoy.
  • The olive oil drizzled into the pan will keep the veggies moist, so if they look a little dry, you can add additional extra virgin olive oil to the pan while they are baking.
  • You can add more or fewer sausages, onions, and peppers to this recipe, there’s no limit when making this.
  • Keep in mind: Different ovens will vary cooking times, depending on the oven you may have.  So it’s best to keep an eye on them.

Sicilian Sausage and Peppers

Sicilian Sausage and Peppers

Sicilian Sausage and Peppers are baked in the oven with sweet onions, colorful peppers, and extra virgin olive oil until the peppers and onions are caramelized perfectly. It is an easy, hearty meal and one your whole family will love!

Prep Time 10 minutes
Cook Time 1 hour
Total Time 1 hour 10 minutes

Ingredients

  • 2 to 3 large sweet onions- sliced
  • 28 -ounces of Mini Sweet peppers, OR 4 large yellow peppers & 3 large reds - seeds removed and sliced
  • 1/4 tsp. garlic powder
  • 1/2 tsp. salt
  • 5 to 10 links of Sweet Italian Sausage ( I used Trader Joe's)
  • 1 lemon
  • 1/4 cup extra virgin olive oil - divided

Instructions

  1. Preheat the oven to 375 degrees F (190C). Adjust the racks inside the oven to fit your roasting pan on the center rack.
  2. First, take a large roasting pan and drizzle generously on the bottom with extra virgin olive oil, at least 2 tablespoons. Toss in your sliced onions and colorful sliced peppers. Add salt and garlic powder and set it aside.
  3. Next, remove sausage links from the package and poke each one a few times with a fork. Then place them on your outside grill (or in a skillet on the stovetop) and grill on medium heat. While you grill them (about 5 minutes), squeeze fresh lemon juice over the links. This will help remove the excess fat along with getting rid of some of the gamy taste from the pork. Grill them just until they are golden brown. *NOTE: They will finish cooking in the oven.
  4. Transfer them to a cutting board and cut each link into thirds. Toss them into your prepared roasting pan with onions and peppers.
  5. Drizzle on top with additional extra virgin olive oil.
  6. Place the roasting rack onto the middle rack inside the oven.
  7. BAKE uncovered, for up to 1 hour total. Check on them after the first 1/2 hour of baking and give them a stir to ensure the peppers on the bottom don't burn. Peppers should be moist and juicy.
  8. Remove and transfer to a serving dish. Cover them with foil wrap until ready to serve. Serve warm.
  9. Serves 6 to 8

  1. This is a great Italian dish. I grew up on this and still make it today for my family. We also, at times, will add some quartered potatoes to this, and/or pieces of this in addition to the sausage. I usually do two pans. One with sweet Italian sausage and one with the hot Italian sausage. This is always a crowd pleaser.

    1. Hi Carole! Welcome to our recipe blog, it is so nice to meet you! Yes, we agree this is always a crowd pleaser. And, we love to add in chopped potatoes at times. Our mom made it this way too. I have that recipe on this site as well: https://2sistersrecipes.com/oven-baked-thin-sweet-sausages-red-bell/. So glad you stopped by and thank you for subscribing to us, we appreciate and hope you will continue to enjoy our recipes. Have a great Sunday! ๐Ÿ™‚

  2. Great recipe. Been making this for years. Just an fyi, Trader Joe sells Italian sausage, both mild and hot. However, that is not Sician sausage, I have only found Sicilian sausage, like the kind that I ate while in Sicily at specialty Italian stores usually made by the local butcher. And there is a taste difference. Your recipe is not traditional and should not be called Sicilian but darn good.

    1. Hi Manny! Thank you for your comment! Sicilian sausages usually contain other spices such as fennel, and yes you can special order those or get them at your local butcher. However, I do not like the flavor of fennel, and prefer the sweet Italian sausages over the spicy ones. My husband is not only Sicilian, he was born and raised there, and his mom, even in Sicily, always made this recipe using local pork sausages. I understand your thought, my husband has the same thoughts when he hears the words “Sicilian pizza.” There is no such thing in Sicily as a thick dough pizza topped with sauce and mozzarella. In Sicily, thick dough pizza is topped with onions, anchovies and fresh tomatoes, NO cheese! And it’s correct Sicilian name is Sfincione. So glad to hear you enjoy our recipe!! ๐Ÿ™‚
