I had some bok choy leftover, and I was looking for a recipe to use it up, other than soup. I had the apples and everything else. Made this and it was wonderful. I love the tartness of the apples with the apple cider vinegar and the crispy bok choy. Everything works well together, easy to make and is a good side dish.
