Butternut squash is a bright orange vegetable, related to the pumpkin and other winter squashes.    You can find it already pre-cut in most supermarkets.

But in case you don’t, you may find pre-cut butternut squash in the freezer section at supermarkets.  It’s a time-saver!

This is a wonderful vegetable to keep on rotation throughout the fall and winter seasons.  From soups to casseroles to pasta dishes, you can use butternut squash in so many recipes.

WHY WE LOVE BUTTERNUT SQUASH!

  • Squashes like the butternut squash are low in calories and a top-notch source of vitamin C, calcium, and vitamin A.

  • They are also and high in antioxidants, along with having anti-carcinogenic, anti-antioxidant, and anti-inflammatory properties.

  • They are low in fat and deliver a substantial dose of dietary fiber and omega-3 fatty acids, which are linked to good heart health.

So many good reasons why we should include squashes on our rotation, right?

It’s not easy getting kids to eat everything you make for dinner, but this is one they may try and even enjoy.

With teenagers, a husband, and a business to run, I am always thinking of simple ways of making dinner that is quick and easy, and delicious at the same time.

With just a few ingredients, you will have a great side dish that will go with any entrรฉe, no question.
