Hi Christa,
I have never made them one day ahead. But if I had to guess, I think you can prepare them in your muffin pan, cover with clear wrap and refrigerate. Then remove them From the fridge-at least 15 to 20 minutes to warm them up slighty, then bake…. but keep an eye on them… they may need more baking time.
