It's so nice to meet you and thanks for stopping by! My sister Liz is the one who came up with this idea and you're so right – this can be good lunch for school or work. I would bring the salad in a container then assemble the salad over the pita just before you eat it. This way the pita will stay crisp and not turn soggy.
