It’s bitter cold here in Charleston, but we can’t complain since our families and friends have been slammed with 2 feet of snow up North.ย 

This is theย kind of weather weย enjoy staying home inย and cooking together; making roasts, stews, soups and evenย baking some delicious chocolate chip cookies.

This honey-lime glazedย pork tenderloin is just the thing for some warm and comforting food during this cold weather.ย  ย 

And it’s easily made and ready in 30 minutes!

The glaze is made with extra-virgin olive oil, balsamic vinegar, Worchestershire sauce, fresh garlic, ground cumin, fresh lime juice, zest, and honey.ย 

While the recipe makes enough to glaze the tenderloin, there is plenty extra to pour on the pork after it’s been sliced.

This Honey-Lime Glazed Pork Tenderloin turned out to be delicious, juicy, super moist, and tender.  You can serve it with just about anything.

We served it last night with a side of our Easy Garlic Mashed Potatoes and a green salad.

Luckily, I had a few pieces of leftover so I could take these photos in better lighting.  Honey-Lime Glazed Pork Tenderloin is simple and comforting.

How to Make Honey-Lime Glazed Pork Tenderloin?

Ingredients for Honey-Limeย Glazed Pork Tenderloin:

For this recipe, to make the glaze for the tenderloin, you will need the following ingredients:

  • 3 Tbsp. extra virgin olive oil
  • 1 Tbsp. balsamic vinegar
  • 2 Tbsp. Worcestershire sauce
  • 3ย garlic cloves – minced
  • juice andย zestย of 4ย small limes
  • 3 Tbsp. honey
  • 2 Tbsp. ground cumin
  • 1/8 tsp. cayenne pepper

Directions for the GLAZE:

1. Whisk togetherย all ingredients into a small bowl and set aside.

For the Pork Tenderloin:

For the pork tenderloin, you will need the following ingredients:

  • 2 or 3-pound pork tenderloin
  • salt and black pepper
  • 1 onion- sliced
  • 1 to 2 cups of water
  • 1 lime – sliced intoย wedges to garnish
  • 1/2 cup fresh parsley or cilantro, as a garnish

Directions to Cook the Pork Tenderloin:

1.ย  Preheat the oven to 400 degrees F (204 C).ย ย Cover the bottom of the roasting pan with a sheet of foil wrap (for easy cleaning).ย  Scatter the sliced onion, and add a cup of water to the roasting pan.

2.  Place tenderloin on a roasting rack, inside the prepared roasting pan.
Season the tenderloin with salt and black pepper. Brush or spoon the pork with some of the glazes.

 
 

3.ย  Roast the pork for 10 minutes, carefully remove it from the oven, and brush more glaze onto the tenderloin.ย  Do this 2 more times (every 10 minutes) turning over the tenderloin and adding more glaze until fully cooked, about 15 minutes per pound (if you have a meat thermometer, it should read 145 F).


QUICK NOTE: If you noticeย the glaze on the bottom of the panย is startingย to burn and making too much smoke,ย add another cup of water to prevent that from happening.

 

4.ย  Transfer the tenderloin onto a cutting board and allow it to rest for 10 minutes before carving.ย 

5. Carve and transfer sliced pork to a serving platter, garnish with lime wedges on the side, sprinkle parsley or cilantro on top, and spoon some of the remaining glazes over the tenderloin slices.ย  Serve immediately.

Serves 4 to 6
