Onion and Cheese Squares
Onion and Cheese Squares are little squares loaded with sautéed onions and cheese. Savory and delicious in every bite, they’re easy to make, bake, and serve. These squares make a delightful dish for your breakfast or brunch table. Plus, they’re low-carb and keto-friendly.

Make These Onion and Cheese Squares Special
Because these onion and cheese squares are made with eggs, they would be great to bake ahead, reheat, and serve for breakfast, brunch, or lunch. Try them as a side dish for dinner too. Everyone loves them!
They are moist with a very light and fluffy texture. You can enjoy two pieces – quilt-free! This recipe is adapted from our popular spinach and cheese squares. Be sure to try them too.
Ingredients and Substitutions
Here are the ingredients you will need for these onion and cheese squares. And, with ideas for substitutions for you. Plus, our full recipe card is located on the bottom.
- ONIONS – You will need about 3 small onions or 2 medium-sized ones, about 3 cups diced. You can use sweet onions or yellow onions.
- OLIVE OIL – We prefer to use extra virgin olive oil. But if you don’t have any, you can use melted butter in its place, or any olive oil to saute the onions in a skillet.
- FLOUR – I used an all-purpose unbleached flour. You can substitute it with a gluten-free all-purpose flour.
- EGGS – you will need only 2 eggs for this recipe. But you can go to our archives called Substitutions Solutions for different ideas to replace the eggs.
- LEAVENING AGENT – you will need some baking powder. If you don’t have it, you can use baking soda in its place.
- MILK – I used 2% milk, but you can replace it with dairy-free milk, or buttermilk.
- MIX OF CHEESES – I used a Swiss & Gruyere package. Go ahead and use Parmesan, cheddar, or feta if you prefer. Use a blend of shredded cheeses you like.
- SEASONINGS – You will need some salt, garlic powder, cayenne pepper, and black pepper to taste.
- FRESH THYME – I used it to garnish on top, but you can use freshly chopped parsley instead.

How To Make Onion and Cheese Squares?
There are three easy steps to making these onion and cheese squares. And, once you make them, you’ll want to keep this recipe. First, you will need to cook the onions in a skillet with extra virgin olive oil until they are softened and almost caramelized for about 25 minutes. Meanwhile, gather all the other ingredients, measure them, and place them nearby. This will speed up mixing all the ingredients when the onions are finished cooking.
Helpful Tip! I sauteed the onions for only 25 minutes to soften them. But if you prefer to caramelize them – will need to saute the onions longer, about 40 minutes or more.
Step 1: Saute the Onions:
In a non-stick skillet, saute the diced onions on moderate heat with olive oil until softened, about 25 minutes. Stirring occasionally.

Step 2: Whisk Other Ingredients:
Grab a large mixing bowl, then measure all the other ingredients and add them to your mixing bowl. Whisk together all the other ingredients. Then stir in the cooked onions and stir until the mixture is well combined.
Next, pour the mixture into your prepared 8 x 8 baking square pan. Scatter with some extra shredded cheese on top. And, toss some fresh sprigs of thyme.
QUICK TIP: You can use freshly chopped parsley instead of Thyme.

Step 3: BAKE:
Bake on the center rack in your oven and uncovered for about 35 to 40 minutes (or less, depending on your oven), or until it’s golden brown on top and around the edges. Remove and set it aside to cool for a few minutes. Then use a sharp knife to cut into squares, and a spatula to help you serve them.
Helpful Tip! These are very easy to cut into squares. And can be easily cut into either 9 or 12 squares. Plus, you can serve them with a napkin too.

Ingredients
- 3 to 4 cups of diced onions (about 3 small onions)
- 2 Tbsp. extra virgin olive oil
- 3/4 tsp. garlic powder
- 1 tsp. sea salt
- 3/4 cup all-purpose unbleached flour
- 2 whole eggs
- 1 tsp. baking powder
- 3/4 cup milk
- 1/8 tsp. cayenne pepper
- 1 + 1/2 cups mixture of cheeses
- fresh cracked pepper, to taste
- Fresh thyme to garnish
Instructions
- Spray your 8 x 8 square baking pan with some cooking spray and set it aside.
- In a medium-sized skillet, heat olive oil over moderate heat and toss in the diced onions. Add 1/2 teaspoon of salt and some fresh cracked black pepper to the onions. Saute them for about 25 minutes stirring occasionally, until they are softened and golden. Taste the onions, and adjust for salt to your liking.
- Meanwhile, Preheat your OVEN to 375 degrees F (190C). and arrange your racks to have one in the middle of the oven.
- Grab a large mixing bowl, and whisk the garlic powder, salt, eggs, flour, milk, cayenne pepper, and baking powder. Then whisk in the mixture of shredded cheeses.
- When the onions are done. Add the sauteed onions to the mixing bowl with the mixture and stir to combine. Pour the entire mixture into the prepared baking pan. Place it on the center rack in the oven.
- BAKE, uncovered, for 30 to 40 minutes, until the top and edges are golden brown. Remove and allow to cool for a few minutes.
- Cut into squares and serve them warm or at room temperature.
- Yields: 12 squares
Notes
Storing and Freezing:
Store these spinach squares in a sealed container, and place them in your fridge. They will stay fresh for up to 3 days. They freeze well, and up to 3 weeks. After that, you can bake a fresh batch.
