Breakfast Granola Cookies are ideal for busy mornings and a fun way to use up some of your crunchy granola in your pantry. Simple to mix and easy to bake, these breakfast cookies are loaded with wholesome granola, giving them a hearty texture and naturally sweet crunch.
They’re perfect for lunchboxes or a grab-and-go snack with your morning coffee.
Bake a batch ahead of time, and you’ll have a nourishing, homemade breakfast cookie ready whenever you need it!

- Store these cookies: Best to store these cookies in a sealed container; they will stay fresh for weeks.
- Freeze cookies: They will freeze well and for up to 2 months.

Ingredients Needed for Breakfast Granola Cookies
For these breakfast granola cookies, here are the ingredients you will need:
- 2/3 cup light brown sugar
- 1 egg
- 2 Tbsp. granulated sugar
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 stick (8 Tbsp.) unsalted butter (softened)
- 1 cup flour
- 3 cups of any granola – divided

Let’s Make These Breakfast Granola Cookies!
OK, you want to make these cookies, and it couldn’t be easier. Plus, our full recipe card is located at the bottom for your convenience. But first, let’s walk through our steps quickly so you’ll have a better understanding of how to make them.
- Preheat the oven to 350F degrees.
- Measure 1.5 cups of granola. Transfer to a small food processor and pulse to crush the granola. Set it aside.

3. Next, in a mixing bowl, add both sugars, softened butter, egg, salt, and baking soda. Beat with a hand mixer until smooth.
4. Add the one cup of flour, plus 1.5 cups of crushed granola, and continue to beat until well combined.
5. Fold in one additional cup of granola (not crushed). Use a teaspoon, and spoon the mixture onto a baking sheet, at least 1 inch apart.

6. Next, use the back of the spoon to flatten the tops. Sprinkle the remaining granola over each cookie dough, and press firmly on top of each one.

7. BAKE on top rack for 10 to 12 minutes, until golden around the edges and on the bottoms. Remove and allow the cookies to cool for a few minutes before handling them.
