Endive Blood Orange Salad

A wonderful salad to make this season, this Endive Blood Orange Salad is loaded with delicious textures and flavors. It’s full of juicy, bright, colorful oranges, endive slices, crunchy pomegranate seeds, and pine nuts. YUM! We first had this endive blood orange salad at Christine and Richard’s beautiful home in Greenville. Christine cooked a delicious dinner and served this beautiful endive blood orange salad on the side. And it was DIVINE.

So today, I decided to share her recipe with you all, and I can’t wait for you to try it.

What are Belgian Endives?

Belgian endives are a member of the chicory family. They have a crisp texture, a sweet, nutty flavor, and a mild bitterness. They come in white and red and are ideal served raw or cooked.

We love them raw and in salads, like our Endive Pear Walnut Salad and our favorite Fall Orange Endive Salad. Be sure to try those salad recipes soon!

How to Clean and Trim Belgian Endives?

First, rinse each bulb under cold running water, and lightly pat dry with a paper towel. Next, trim the stem end of each endive, being careful not to cut too much or the leaves will fall off. Then, depending on the recipe, gently pull the leaves off each bulb, or slice each endive down the middle and separate the leaves from each half. Serve them raw or cooked as the recipe calls for.
