How to make Burrata and Avocado Toast?

First, gather all the ingredients in front of you. You can use jarred basil pesto sauce. We cannot use the jarred stuff, since we have family members allergic to nuts. In addition, we always make our fresh basil pesto sauce often and have it on hand whenever we need it.

1. First, make a small greens salad. Lightly toss it with a teaspoon of EVOO and a few drops of red wine vinegar. Set it aside while you prepare the burrata and avocado toasts.

2. Next, toast the multigrain bread in your toaster oven or toaster until golden brown and crispy. Place them on a serving plate or platter.

3. Slice open one small avocado (we only used one small avocado for these two small toasts), and mash it in a small bowl. Then, squeeze one wedge of a lemon over the mashed avocado in the bowl and stir it to combine. This will help keep the bright green color in the avocado.

4. Divide the mashed avocado among the 2 slices of toast, spooning half of the mashed avocado onto each toast. Use the back of the spoon and smear it evenly on each toast. Next, grab some fresh basil pesto and spoon one or two teaspoons over the mashed avocado.

5. Open the container of fresh burrata cheese, take one ball out of the container, and place it onto a plate or cutting board. Slice it in half.

6. Next, lay each half of the burrata cheese on top of each prepared toast. Topped with some chopped juicy cherry tomatoes and a sprinkle of minced green onion.

7. Place the prepared green salad on the plate beside the toasts. Add some chopped apple and sliced cherry tomatoes on top of the salad to make it look pretty.
