We caught this cabbage au gratin recipe in a Vera Vera Cookbook, and made a few slight adaptations to it. We can’t say enough about this dish. It’s pure comfort food and you can serve it with practically anything for dinner.

Most Recipes: Most gratin recipes typically have a breadcrumb mixture on top and bottom, and even some flour added. This one does not. Our version is gluten-free, just like our cabbage and ground beef recipe, and this too is absolutely–positively delicious!
The Flavor: Let’s face it, cabbage can be bland. So to further enhance its flavor, we also added grated Parmesan cheese both on the bottom and on top of the dish to give it extra flavor and richness. Plus, the spices add additional flavor.
The Texture: The cabbage becomes soft and creamy, with a zesty savory taste, making it a perfect accompaniment to your favorite entrees. We served it at dinner with our oven-baked brisket and it was amazing. Our family loved it!

Let’s Discuss the Ingredients:
- The Mixture: For our recipe, you’ll need one medium head of green cabbage and a few green onions. These vegetables can be easily mixed in a bowl with 2 eggs, some heavy cream, and shredded cheeses.
- The Spices: Additionally, you’ll want to add a few spices, including nutmeg, cardamom, and cayenne pepper, along with some salt and black pepper. These ingredients combined will make this cabbage gratin taste AMAZING!
QUICK NOTE: There is some flour in the photo (X) – but we decided not to add it into this recipe. And, it turned out great!
How to Make This Recipe for Cabbage Au Gratin?
Our full printable recipe is located at the bottom. But first, let’s go over the steps so you can understand what’s involved before you start.
1. First, sauté the cabbage with green onions for a few minutes in a skillet. This will give the cabbage wedges a slightly charred, golden color.

2. Meanwhile, in one mixing bowl, we measure and mix all the rest of the ingredients and whisk to blend.
3. Next, add the cabbage, and stir everything to combine.

4. Then, transfer the entire mixture into a 9-inch baking dish, scatter with parmesan cheese on top and bake for 35 to 40 minutes. Allow it to rest before serving. Then serve.
This recipe makes 4 to 6 servings
Keep in mind, this Cabbage Au Gratin Recipe is baked in a 9-inch ceramic pie dish and will serve at least 4 to 6 people. Set it down on your dinner, or brunch table, and watch it disappear.
Quick Notes & Tips:
- When the cabbage gratin comes out of the oven, it will still be bubbling, and it’s best to give it a few minutes to rest before serving.
- You can use a knife to slice it, or a small spatula to serve.
- Also, you may add your favorite bread crumbs to this cabbage au gratin recipe on the bottom and top. They will give the dish the crispiness and crunch you would expect. But, we felt it was delicious without them.
- Keep in mind that all ovens, gas and electric, are different. Therefore, the baking time will vary. So keep an eye on the gratin toward the end of its estimated time.

Cabbage Au Gratin Recipe
Cabbage Au Gratin is a delicious recipe for a vegetable side dish with sweet and savory flavors. It's simple, easy to pull off, and will complement, fish, chicken, brisket and more.
Ingredients
- 1 Tbsp. of extra virgin olive oil
- 2 Tbsp. unsalted butter - divided
- 1 medium cabbage, cut into wedges (about 8 to 10 cups)
- 3 green onions (scallions) - rinsed, and sliced
- 1 + 1/4 cups heavy cream
- 2 whole eggs
- 1/4 cup grated parmesan cheese
- 1 cup shredded gruyere cheese
- 1/4 tsp. ground nutmeg
- 1/4 tsp. ground cardamom
- 2 tsp. salt
- 2 dashes of cayenne pepper
- fresh cracked black pepper to taste
Instructions
- Preheat your oven to Bake at 375 degrees F (200C).
- First, grease a 9-inch pie baking dish with some butter, and scatter about 2 or 3 tablespoons of grated parmesan cheese on the bottom of the dish. Then set it nearby.
- In a deep skillet, add 1 tablespoon of butter and 1 tablespoon of olive oil. Heat on moderate heat and add the cabbage wedges and green onions. Grill teh cabbage for 1 to 2 minutes per side, only to give them some golden color. Turn off the heat, and remove the pan from heat, allow the cabbage to cool for a few minutes.
- Next, In a large mixing bowl, measure and whisk all the remaining ingredients: heavy creamy, eggs, 1 cup of gruyere and 1/4 cup of parmesan cheese, and seasonings. Then fold in the grilled cabbage, until the mixture is well combined.
- Transfer to your prepared baking pie dish. Scatter on top with an extra 3 tablespoons of grated parmesan cheese, and some fresh cracked black pepper, if you like.
- BAKE on the middle rack of your oven for about 35 to 40 minutes, until the gratin is golden brown on top and around the edges. Remove and set it aside to cool for a few minutes. The gratin will be bubbling and will slowly settle down. Then cut, or spoon into servings and serve.
Notes
Cover with aluminum or clear wrap any remaining leftovers and keep it chilled in the fridge. It will stay fresh for up to 3 days. And it's an easy dish to reheat in a toaster oven or microwave.
