Overview: What Ingredients You Will Need:
- Olive Oil: You will need some extra virgin olive oil to sautรฉ the vegetables in the skillet.
- Vegetables: You will need an onion, some garlic cloves, 3 small or medium-sized zucchini, and only a handful of cherry tomatoes, about 10.
- Herbs: Choose fresh basil or fresh parsley for this recipe. I prefer basil and at times, we like to add both herbs for more flavor.
- Liquid: Choose organic vegetable broth, and you will need some water as well.
- Seasonings: Some salt, crushed red pepper flakes, and fresh cracked black pepper.
- Grated Cheese: Choose a good quality of pecorino cheese for the best flavor.
- Pasta: Choose any orzo pasta (or gluten-free orzo) for a tender, creamy texture with this dish.

How To Make Orzo Pasta with Zucchini & Tomato

- Prep The Vegetables: First, prep all the vegetables for this recipe. Dice the onion and garlic, then quarter the zucchini and slice the tomatoes. The full recipe card and video are at the bottom of this page.

2. Sautรฉ In Skillet: Heat olive oil in a large 12-inch skillet, and on medium-high heat. Toss in the diced onion and cook until softened. Toss in the garlic, then zucchini, tomatoes, and basil, along with all the seasonings.
3. Add the Liquid: Pour in the liquid, the broth, and water, bring to a full boil, and add the orzo pasta.
4. Cook the Pasta: Simmer until the orzo is cooked to an al-dente texture. Toss in the fresh basil, and grated cheese. Stir to combine. Taste, and adjust the seasonings if needed. Then serve.

FAQ’s
- Can we use gluten-free orzo? Yes, you can. Keep in mind, that ratios and measurements here are for regular orzo and could be different for other types of orzo. I recommend checking the package instructions.
- What is the ratio of liquid to orzo? Usually, it is about 2 cups of liquid for 1 cup of orzo. And, that works with this recipe.
- Do we need to rinse the orzo before cooking it? Orzo is a pasta, and it doesn’t need any rinsing.
- How many servings does 1 cup of orzo yield? It always depends on how you’re cooking and serving it. Usually, we calculate as an addition to salads or soups, about ยผ cup of uncooked orzo per person should be enough.

Storing and Freezing:
- Store any leftovers in an air-tight container and keep it chilled in your refrigerator. It will stay fresh for up to 3 days.
- If you prefer to freeze the leftovers, you can. It will freeze well but for up to one month. It’s best to label your containers with a date to keep track of how long they have been frozen. After that, discard it and make it fresh again.

Orzo Pasta with Zucchini & Tomato
Orzo Pasta with Zucchini & Tomato is made with 5 fresh ingredients and cooked in one skillet! Amazingly easy to make, and delicious-tasting, making dinner ready in under 30 minutes. Perfect!
Ingredients
- 4 Tbsp. extra virgin olive oil
- 1 medium onion - diced
- 2 garlic cloves- minced
- 1/8 tsp. crushed red pepper flakes
- 3 medium sized zucchini - rinsed, and quartered
- 10 cherry tomatoes - sliced in halves
- 1/4 cup fresh basil - chopped
- 2 cups vegetable broth
- 1 cup water
- 1 cup of dry orzo pasta
- 1/2 tsp. salt
- 1/3 cup grated pecorino cheese
- fresh cracked black pepper to taste
Instructions
- On medium-high heat, heat olive oil in a large non-stick skillet. Toss in the onions, and sauté them, stirring occasionally, until softened, about 3 minutes.
- Toss in the minced garlic, and crushed red pepper flakes, and stir to combine. Then add the chopped zucchini, tomatoes, and fresh basil. Add the seasonings on top, and continue to sauté and cook the veggies for about 3 to 5 minutes to infuse all the flavors.
- Pour in all the liquid, and bring it to a full boil. Add the orzo pasta, and stir until the orzo cooks to an al-dente texture, and most of the liquid has been absorbed.
- Taste the orzo. If the orzo pasta is ready, turn off the heat and scatter with grated cheese on top along with additional freshly chopped basil. Then serve.
