Shaved Brussels Sprouts Salad Recipe
This shaved Brussels sprout salad recipe was inspired by a dish I enjoyed at a local restaurant. Initially, I was hesitant to order the salad, but the waitress assured me it was the most popular item on the menu and highly recommended it. After trying it and finding it delicious, I decided to recreate it at home.
As always, Brussels sprouts are a nutrient-dense vegetable packed with fiber, vitamins, and antioxidants. They’re an ideal vegetable to incorporate into meals all winter long.

How To Make Shaved Brussels Sprouts Salad?
This salad is relatively easy. Before you begin, gather all the ingredients for this recipe. There are 6 ingredients to make the salad and 4 ingredients for the citrus dressing. Ingredients Needed for this Salad:
For two or three servings, you will need: about 6 fresh Brussels sprouts, 2 to 3 handfuls of baby spinach, about 1/4 cup of dried cranberries, one apple, 1/4 cup of red onion, and crumbled goat cheese. Plus, with any of these ingredients, you can easily adapt with substitutions for special needs and diet.
QUICK NOTE: For this recipe, you will only need about 6 Brussels sprouts. Therefore, you can reserve the others for another recipe, like our Brussels Sprouts Soup, or a side dish, Roasted Brussels Sprouts with Bacon.
For the Dressing:
For the citrus dressing, you will need: one navel orange, apple cider vinegar, extra virgin olive oil, honey, and a little salt and pepper to taste. Simple and delicious.

What to look for when buying Brussels Sprouts?
We prefer fresh veggies with our salads. When shopping for fresh Brussels sprouts, always look for ones that are:
- firm
- compact
- and bright green
How do we shave fresh Brussels sprouts?
One of the easiest ways to shave Brussels Sprouts is with our favorite kitchen tool we like to use often, known as a Mandoline Slicer. This tool not only shaves any vegetable thinly, but it also has a built-in blade with an adjustable tab for customization.
Additionally, it includes a hand-held shield to protect your fingers from getting caught in the blade. We love this mandoline slicer and it’s perfect for this recipe.
After you shave a few Brussels sprouts … the rest is easy!

Directions to Make Shaved Brussels Sprouts Salad:
Our printable recipe card is located at the bottom. But first, let’s go over these steps to help you understand what’s involved before you start.
- Make The Dressing: In a small mason jar or bowl, whisk the 4 ingredients for the citrus vinaigrette. Set it aside.
- Make the Salad: In a mixing bowl, toss in 5 ingredients: shaved Brussels sprouts, fresh spinach, dried cranberries, chopped apple, and red onion.

3. Add the Vinaigrette: Drizzle about half the vinaigrette into the mixing bowl and toss until completely combined. Taste, and season with salt and black pepper. If you prefer more dressing? By all means, add in more and toss again to combine.
4. Then Serve: Plate the salad onto one large bowl, or on two individual plates. Scatter on top with crumbled goat cheese and serve. Yields: 2 to 3 servings.

Options To Make it Your Own
Every time we’re in the kitchen whipping up salads, we love to switch things up. Try any of these variations for something different.
- For Some Crunch: Toss in some chopped toasted pecans for some crunch and additional protein. Try it with toasted almonds.
- Smoky Flavor: Also, add some chopped crispy applewood bacon, for some smoky flavor.
- Add Carbs: Toss in about 1 cup of cooked quinoa for additional protein and texture.
- Sweetness: If you prefer, you can add in additional dried cranberries, or raisins – more or less – to your preference.
FAQ’s
- Can we use “frozen” Brussels sprouts? The answer is no, you shouldn’t. For the best flavors and textures, all salads are best when using only fresh ingredients.
- Can we make this salad ahead? You can prepare the salad ingredients (but hold the crumbled cheese and dressing) in a mixing bowl. And cover with clear wrap. Before you serve, toss the salad with the dressing, plate it, and top with crumbled goat cheese.
- What to do with the extra freshly cleaned Brussels Sprouts? Easy. Place them into a sealed zip-lock bag and freeze them for future use. Or keep them in your produce drawer in your refrigerator and use them for a recipe, within 3 days.
- Can we make the citrus dressing with lemon juice instead of orange juice? Yes, you can. We have made this dressing both ways.

Ingredients
SALAD INGREDIENTS:
- 6 fresh Brussels sprouts - ends cut off and thinly shaved
- 3 ounces of fresh baby spinach
- 1/4 cup dried cranberries, and extra to taste
- 1 small crisp apple - peeled, cord, and chopped
- 1/4 cup red onion - finely chopped
- 3 to 4 Tbsp. crumbled goat cheese
APPLE CIDER CITRUS DRESSING:
- 2 Tbsp. orange juice ( from 1 Navel orange)
- 1/4 cup extra virgin olive oil
- 1/2 Tbsp. honey
- 2 Tbsp. apple cider vinegar
- dash of cayenne pepper
- salt and fresh cracked black pepper to taste
Instructions

Notes
This is a recipe for 2 to 3 servings. You can double the ingredients and make a larger salad to serve a large gathering.
Store any leftovers in a sealed container, it will stay fresh and crisp for up to 24 hours. And, it should be consumed the next day.
