My daughter called me the other day and mentioned a “crock pot” soup she made, and how much her family loved it. So I decided to give it a try.

I have to tell you, this chicken gnocchi soup was so flavorful and very easy to make. Plus, I made it in my Dutch oven – instead of the crockpot.

This chicken gnocchi soup turned out better than I had expected. It’s thick, creamy, with bite-sized pieces of chicken and tender gnocchi dumplings. Plus, it’s loaded with veggies. YUM! It’s so good, it’s DIVINE!

Best part? It took 35 minutes to cook all the components and was ready to serve. Served with a side of crispy toast or crusty bread for dunking. It’s so good – everyone will love this soup!

What is Gnocchi?

For those of you who have never heard of Gnocchi, well, you’re in for a nice surprise! Gnocchi is a small Italian potato dumpling that resembles a little pasta. The texture is light, soft, and fluffy when boiled, and it cooks up quickly. Gnocchi is pronounced as Nyo-kee, where the “g” is silent. And, a delicious alternative to pasta, gnocchi are wonderful to add to tomato sauces and soups.

Ingredients You Will Need:

Please note that the garlic cloves are not included in the photo below. Also, we used 1 package of chicken breasts that were already sliced. Then follow our steps below to make this soup.

  • Chicken breasts or cutlets
  • Carrots
  • Celery
  • Onion
  • Garlic
  • Italian Seasonings, plus salt and pepper
  • Vegetable Broth (or chicken broth)
  • Heavy cream
  • Grated Parmesan cheese
  • Baby Spinach
  • Gnocchi, a package of dried gnocchi
  • Extra-virgin olive oil

How to make our Chicken Gnocchi Soup?

First, gather all the ingredients on the counter. Once you start cooking, the soup comes together in a matter of minutes. As a reminder, our full recipe card is located at the bottom. But first, let’s run through our quick description and easy-to-follow steps below.

1. + 2. Sautรฉ the Chicken: Use a large soup pot or 5 or 6-quart Dutch oven. Add the olive oil and saute the pieces of chicken. Use the wooden spoon to help break up any of the larger pieces. Stir while sauteing until no pink is visible, about 5 minutes.

3. Sautรฉ the Veggies & Add the Broth: Add the chopped vegetables (but hold the spinach for the end) and the broth. Cover and simmer for 20 minutes.

4. Add the Gnocchi, Cream, and Parmesan: Remove the cover and add the gnocchi, pour in the heavy cream, and the grated parmesan cheese. Stir to combine.

5. Add the Spinach: Finally, toss in the fresh baby spinach. Stir and simmer for an additional 3 to 4 minutes. Taste for salt. The gnocchi should be soft and tender to the bite.

6. Turn off the heat and serve.

FAQ’s

  1. How many servings does this recipe yield? This recipe for chicken gnocchi soup should give you at least 5 to 6 servings.
  2. Where can we find gnocchi? Gnocchi can be found in the dried pasta section at your local supermarket. You may find it, and even different brands, in the “fresh pasta section” in the refrigerator. Sometimes in the freezer section, too.
  3. How to store leftovers? Best to store leftovers in a sealed container and keep them chilled in the refrigerator. It will stay fresh for up to 3 days.
  4. Can we freeze this chicken gnocchi soup? We do not recommend it. Freezing it will change the texture of the gnocchi, and it will not be good.
  5. How do we know when the gnocchi is fully cooked? It will tell you on the package how many minutes it will take to cook them. Also, these little dumplings usually float to the top when they’re ready. They should be tender to the bite.
  6. What to serve it with? Serve it alone with some crusty bread or toast for dipping. Or serve them with our Cheesy Mini Biscuits or a green salad as a side for a complete meal.

Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 1 pound of chicken breasts
  • 1/4 tsp. salt
  • fresh ground black pepper
  • 4 small carrots - chopped
  • 5 to 6 small celery stalks - sliced
  • 1 large onion- chopped
  • 2 large cloves of garlic - diced
  • 1 Tbsp. Italian seasonings
  • 4 cups of vegetable broth (or chicken broth)
  • 1/2 cup heavy cream
  • 1 + 1/2 cups of grated Parmesan cheese
  • 2 large handfuls of fresh baby spinach
  • 1 pound of gnocchi

Instructions

Recipe For Chicken Gnocchi Soup on STOVE-TOP:

1. First, grab a large soup pot or a 6-quart Dutch oven. Set it on the stove top and add the EVOO.

2. Next, rinse and drain the chicken and cut it into 1-inch cubes. Toss them into the pot and turn on the heat to moderate. Scatter salt and some black pepper over the chicken pieces. As the chicken pieces are cooking, use a wooden spoon to break up any large pieces. Cook for 5 minutes, stirring the chicken to cook all sides as needed.

3. Now, add in chopped onions, garlic, celery, and carrots. Cook for 5 minutes, stirring occasionally.

4. Pour in 4 cups of broth, and add the Italian seasonings. Cover, bring to a full boil, then lower the heat and simmer the soup for 20 minutes.

5. Finally, remove the cover, add the final 4 ingredients: the gnocchi, heavy cream, parmesan cheese, and fresh baby spinach. Stir to combine. Bring to a quick boil, then lower the heat to a simmer for 3 to 4 minutes. Taste the soup for salt. The gnocchi should be fully cooked. Turn off the heat and serve.

Recipe for Chicken Gnocchi Soup in a SLOW-COOKER or CROCKPOT:

1. Follow our directions 1 through 4 in our directions above for the stove top. Then set your timer to slow-cook for the time you prefer.

2. To finish the soup, and 5 minutes before you are ready to serve, add in the last 4 ingredients: the heavy cream, parmesan cheese, fresh spinach, and the gnocchi. Stir to combine, and simmer for an additional 5 minutes, then serve.

Recipe for the INSTANT POT:

1. First, pour the olive oil into the Instant Pot and press the "Saute" button.

2. Next, add the chopped chicken pieces, along with salt and pepper. Cook for 4 minutes until there's no pink showing in the chicken pieces.

3. Add the chopped veggies (hold the spinach till the end) and the broth. And, cancel the "saute" button. Close the pot and set it on "Soup." Follow the directions in your manual.

4. Open the lid, add the cream, gnocchi, parmesan cheese, and spinach. Stir it and cover with the lid, and allow the soup to rest in the Instant Pot for 3 to 5 minutes. The cream will thicken while the gnocchi will cook itself while sitting in the hot broth. Then serve,

Notes

IMPORTANT NOTE! No matter what method you decide to make this chicken gnocchi soup in, always remember the Gnocchi is always added 5 minutes before you serve. And, simmer them until they are light and fluffy. Otherwise, you will end up with overcooked dumplings that will turn out too mushy and not delicious tasting.

  1. looks delicious. can you tell me how long to cook frozen gnocchi in this soup? I make it with sauce but never in a soup. that’s what is available to me. Thank you.
