Homemade Chicken Soup Recipe

Our Homemade Chicken Soup Recipe is loaded with flavor, and it’s an easy recipe, you’re going to LOVE! It is made with a few vegetables, boneless and skinless chicken breasts, chicken broth, white wine, parsley, and Italian mini pasta. We took our mother’s recipe and turned up the flavors, making this chicken soup robust, hearty, and very satisfying.

Our homemade chicken soup happens to be our mom’s recipe and boy, it is loaded with bold flavors!

Keep in mind, Italian cooking is all about using quality and fresh ingredients. It’s not about adding many seasonings to give them flavor.

So let’s discuss – how to make our chicken soup (the easy way!)

How To Make Homemade Chicken Soup? (the easy way!)

Our recipe is much easier and simpler and requires fewer steps.

With this recipe, there’s no need to boil chicken with bones beforehand. Unlike other soup recipes that require boiling the chicken with bones, our mom uses only skinless, boneless chicken breasts sliced in halves.

For this recipe, we prefer cooking the chicken in the same pot as part of the soup stock. Also, we prefer extra virgin olive oil to add richness to the broth, along with a few fresh vegetables to flavor the stock.

Plus, some white wine, chicken broth, and water along with some salt and black pepper and fresh parsley are added to flavor the stock as well.

Lastly, we prefer to use a good quality Italian pasta, known as pastina, called Acini di pepe.

The result? A-MAZING! … to say the least! ๐Ÿ˜‰

Ingredients Needed for Homemade Chicken Soup:

For our recipe, here is an overview of the ingredients needed: (*full recipe card below!)

  • Extra Virgin Olive Oil – good quality olive oil gives this soup the richness and flavor it deserves.
  • Garlic Cloves – you will need only 2 garlic cloves, minced.
  • Onion – 1 medium onion is enough and diced.
  • Vegetables – we prefer fresh vegetables, 4 carrots, plus, 2 stalks of celery are sufficient for this recipe.
  • Chicken Breasts -1 pound (16-ounces) skinless, boneless sliced chicken breasts, about 2 breasts sliced in halves.
  • Seasonings we prefer about 1 tsp. of Himalayan salt, and some fresh cracked black pepper, to taste.
  • Wine – a good quality drinking wine, like a Pinot Grigio, and about 3/4 cup.
  • Broth – you will need 3 to 4 cups of low-sodium chicken broth, plus 2 cups of water, and extra as needed.
  • Parsley – best to use freshly chopped parsley, about 1/4 cup or more, plus a ltttle extra to garnish.
  • Italian Pastina – we prefer Acini di pepe (Italian mini pasta), and 1 cup is enough.

Directions to Make Homemade Chicken Soup:

  1. In a Dutch oven or large pot for soup, heat olive oil over moderate heat. Add all the chopped and sliced vegetables. Sautรฉ the vegetables, stirring occasionally until they start to soften, about 3 to 4 minutes.
  2. Add the pieces of chicken to the pot and directly on top of the veggies. Scatter the salt and some black pepper over the chicken. Cook and simmer the chicken for about 1 minute per side.

3. Next, pour in the white wine. Cover with a lid, bring to a low boil. Stir everything in the pot, allowing the chicken to cook, and simmer in the wine and vegetables for about 2 to 3 minutes.

4. Pour in the broth and water.

5. Remove the cooked chicken, place them onto a plate or cutting board, and chop them into “bite-size” pieces. Toss them back into the pot.

6. Add the chopped parsley.

7. Bring soup to a full boil, toss in the Italian pastina, cover and simmer the soup for 10 minutes, until the pastina is cooked, and serve.

Quick Notes…

  • The longer you keep the soup in the pot, sitting to be served, the more the broth will get reduced and absorbed into the pastina.
  • Therefore, when that happens, just pour in additional water or chicken broth to your preference.
  • This soup is loaded with flavor, so there is no need to serve with grated cheese. Making this soup completely “dairy-free!”
  • If you prefer, you can serve it with grated parmesan cheese at the table. and ENJOY!

Q & A…

  1. Can we make chicken soup in a Crockpot, Slow Cooker, or Instant Pot? Yes, you can. Just follow the instructions to sautรฉing the vegetables and chicken, then pour all the liquid, and close the pot. Then before you’re ready to serve dinner, remove the chicken, chop them, and return them to the pot, add the Italian pastina, simmer for additional 10 minutes, and serve.
  2. Can we make it using other parts of chicken? Yes, you can. You can use chicken tenders, or chicken cutlets because they are boneless.
  3. May we use other seasonings? If you wish, you can, I won’t stop you.
  4. Can we omit the wine? If you prefer no wine, or don’t have any on hand, then yes, you can add in additional chicken broth.
  5. How to freeze this soup? Always allow the soup to cool completely before transferring leftovers to a sealed container and freeze. It will freeze well for up to 2 months.

Our Homemade Chicken Soup Recipe is an easy one. It is made with a few vegetables, boneless chicken breasts, chicken broth, white wine, parsley, and Italian mini pasta.

Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 2 garlic cloves - minced
  • 1 medium-sized onion - diced
  • 4 carrots - peeled, sliced
  • 2 stalks of celery - sliced
  • 1 pound (16-ounces) skinless, boneless sliced chicken breasts or chicken cutlets

  3. Next, pour in the white wine and cover. Bring to a low boil, and stir everything in the pot, allowing the chicken to cook, along with the vegetables, for about 2 to 3 minutes.
  4. Pour in the chicken broth, and water. Then, (use kitchen tongs) remove the chicken and transfer them to a plate or a cutting board. Use a knife and fork to cut/or chop them into smaller "bite-size" pieces, and return them back into the pot. Toss in the freshly chopped parsley.
  5. Bring the soup back to a full boil, and add in the Italian pasta: Acini di pepe pasta. Cover with a lid, and lower the heat to simmer the soup, until the pasta is fully cooked, about 10 to 12 minutes. Taste and adjust the salt, if needed. Remove from heat, garnish with additional chopped parsley.
  6. Serve the soup in individual bowls and enjoy!

Notes

Always keep in mind, the longer the soup sits on the stove, the more the broth will get absorbed into the Italian pasta. Therefore, if that happens, just pour in additional water or chicken broth to your liking.

To Store and Freeze: Always allow the soup to cool completely before transferring leftovers to a sealed container and freeze. It will freeze well for up to 2 months.
