Ingredients You Will Need:

The following ingredients for our hearty hamburger soup may look like it’s a lot – but it’s really not. Most of the ingredients you probably already have in your pantry. For this recipe, you will need the following ingredients:

  • Ground Beef: We prefer to purchase ground chuck beef, and at 80% lean with 20% fat.
  • Extra Virgin Olive Oil: Use only about 2 tablespoons to sauté the aromatics.
  • Onion: Only one large onion is needed, and chopped.
  • Garlic Cloves: You will need 3 garlic cloves for this recipe.
  • Celery: And, about 2 to 3 stalks of celery, sliced.
  • Tomato Paste: You will only need 1 tablespoon of tomato paste for this recipe.
  • Peeled Tomatoes: For this recipe, we used 1 can (28-ounces) of peeled tomatoes, imported from Italy.
  • Potatoes: You can use 2 large potatoes, quartered or chopped. Also, you can toss a few small potatoes, sliced in half.
  • Carrots: A few carrots, sliced.
  • Bell Peppers: We added half of each bell pepper, red, yellow, and orange. They were too large and would overpower the flavor in this hamburger soup. We used the other half of each pepper, sliced and tossed them into our green salad. So no waste there.
  • Beef Stock: You will need about 2 cups of beef stock, plus some bottled water.
  • Seasonings: You will only need some cayenne pepper, dried oregano, and salt and black pepper is all you will need.
  • Fresh Parsley: We always keep fresh chopped parsley in a container and in our freezer to always have it on hand when cooking.

How To Make Hearty Hamburger Soup?

This recipe is straightforward, even if never made a soup before. And, with our step-by-step instructions, you too can make this delicious, hearty hamburger soup to enjoy!

1. Grab your large soup pot, or a 6-quart Dutch oven. Heat 1 tablespoon of olive oil and toss in the chopped onion, garlic, and celery. Cook for about 3 to 5 minutes, stirring occasionally.

2. Next, add the ground beef, and use a wooden spoon to help break up the pieces while it’s cooking and browning. Meanwhile, grab a ladle or large spoon and a coffee mug, and place the coffee mug closest to the pot. With the spoon, try scooping the excess oil from the bottom and pouring it into the nearby mug. Continue until most of the fatty oil has been removed. Then discard the fatty oil.

3. Add the remaining 1 tablespoon of olive oil to the meat mixture. Continue to cook the meat until all pink is no longer visible and the meat is nice and brown, about 5 minutes.

4. Stir in a tablespoon of tomato paste, and open a 28-ounce can of imported Italian peeled tomatoes. Add them to the ground beef mixture. Use the wooden spoon to break up the peeled tomatoes in the pot, stirring to combine them.

5. Pour in the beef stock and all the seasonings, plus the chopped potatoes, bell peppers, and chopped carrots. Stir to combine. Here is where you can add 1 cup of water if you think it needs additional liquid.

6. COVER and simmer the soup for the first 25 minutes, then uncover, and simmer for another 15 to 20 minutes. Taste, and adjust for salt. Then turn off the heat. Keep the soup covered until you are ready to serve. Serves 6 to 8

How long can we store Hamburger Soup?

It’s best to wait for the soup to cool completely before storing. Then transfer any leftover hamburger soup to an air-tight container, and keep it chilled in the fridge, only up to 3 days.

Can we freeze leftover Hamburger Soup?

Yes, you can, and it will freeze well, up to 2 months. After that, discard and make a fresh batch.

  • 2 white potatoes - chopped
