Tomato Avocado Basil Salad

Beautiful ripe tomatoes are in season, and what better way to use them up than with this Italian-inspired Tomato Avocado Basil Salad. This is a juicy salad loaded with flavor. It is SO good – everyone will rave about its savory flavors.

When it comes to making this salad, my husband does it best. He first layers the fresh produce in a serving salad bowl, then pours in the extra-virgin olive oil along with some garlic powder and sea salt. Then he tops it with scoops of fresh avocado and chills it for at least an hour before adding the vinegar.

Similar process to making our Best Fresh Italian Green Salad, only this one doesn’t contain any lettuce.

This salad is not only simple and delicious, but we think you will keep making it for a few more weeks of summer while the Sweet Campari Tomatoes are still selling in the markets.

Tips for Storing & Leftovers

A fresh salad like this one is good for only 48 hours. After that, the tomatoes will get too mushy. Store any leftover salad in a sealed container in the refrigerator.

  • You can use some of the leftover salad in a sandwich the next day.
  • Use the leftover salad and top your chicken cutlet or grilled chicken.
  • Spoon some over your grilled steak or fish- it is DIVINE!
  • Make our Perfect Veal Cutlet Milanese the next day and use the leftover salad to go with it.
