Our Arugula, Artichoke & Burrata Salad is no exception, and it deserves a spot on your summer menu. With peppery arugula, tender artichokes, and creamy burrata, every bite is a delicious combination of fresh, seasonal flavors.
It is loaded with nutrients and protein. The burrata cheese is high in protein! In fact, 100g of Burrata Cheese contains 18.7g of protein. đŸ˜‰

Never Heard of Burrata Cheese?
Burrata is a fresh Italian cheese typically sold in the dairy and specialty cheese section. It is shaped like a ball, with a delicate mozzarella exterior filled with a rich, buttery cream center. And, the result is you get an amazing cheese that is exceptionally creamy and considered irresistible.
Burrata originated in the area around Bari, in the southern Italian region of Puglia. It was considered a regional specialty, but w – burrata is available and can be found in supermarkets around the world.

How to make Arugula Artichoke & Burrata Salad?
For this salad, you will only need a simple dressing (2 ingredients for the dressing), plus 5 additional main ingredients to turn this salad into a sensational one!
Ingredients Overview:
Remember, when it comes to making salads, any amount of greens is optional, along with additional condiments to your taste.
- ARUGULA – Choose a package of already cleaned fresh arugula to make this a quick salad. If you cannot find it already clean, just rinse and spin out the excess water before placing it into the bowl.
- ARTICHOKES HEARTS – Choose a jar of marinated artichoke hearts. They are loaded with flavor, and you will need at least 1 cup of marinated artichokes. Be sure to allow them to drain a little before topping the salad.
- BURRATA CHEESE – You will need 1 container, which contains either one large or 2 smaller balls (8 ounces).
- KALAMATA OLIVES – Choose pitted ones, and about 1/4 cup is enough and not overpowering.
- EXTRA VIRGIN OLIVE OIL – choose a good quality olive oil for the maximum flavor.
- BALSAMIC VINEGAR – Choose a good brand of balsamic for a sweet, savory flavor. Balsamic offers the perfect sweetness and balances the peppery arugula.
- SEASONINGS – we used a good pinch of Himalayan salt, and some fresh cracked black pepper on top, at the end.
- BASIL – freshly cut ribbons of fresh basil are added on top to add additional flavor to this sal,ad and it works perfectly as a garnish on top.
- BALSAMIC GLAZE – this sweet-tasting balsamic glaze is thick and adds the final touch! Drizzle over this entire salad before serving.

Directions To Make This Salad:
For this salad, here are our Step-by-Step directions for you to follow. Plus, our full recipe card is located at the bottom.
1. First, toss fresh arugula into your salad bowl. Next, sprinkle with a pinch of salt, and drizzle the extra virgin olive oil and balsamic vinegar. Toss it a few times to coat the arugula leaves.
2. Next, add the Kalamata olives on top.
3. Add the artichokes! Spread on top with a few marinated artichoke hearts.
4. Finally, lay the balls of burrata cheese on top.

5. Next, cut the burrata cheese in half (giving you 4 equal parts) and gently spread open each one. Add the chopped fresh basil on top, along with some freshly cracked black pepper.
6. Finally, drizzle with the balsamic glaze over the entire salad. Then serve!
QUICK NOTE: The balsamic vinegar is different from the balsamic glaze. These are 2 different ingredients. But work very well together in this salad.

Ingredients
- 1/2 of a (7-ounce) package of fresh arugula, or as much as needed
- 2 Tbsp. extra virgin olive oil
- 1 + 1/2 Tbsp. balsamic vinegar
- pinch of Himalayan salt
- 1/4 cup pitted kalamata olives
- 1 cup marinated artichokes - drained
- 1 (8-ounce container) (227grams) of Burrata Cheese (2 balls)
- 6 fresh basil leaves - chopped
- freshly cracked black pepper, to taste
- balsamic glaze - to drizzle over the entire salad before serving
Instructions
1. Place the arugula into your salad bowl. Next, sprinkle with a pinch of salt, and drizzle the extra virgin olive oil, and balsamic vinegar. Toss it a few times to combine the dressing evenly.
2. Scatter on top some Kalamata olives. Next, spread some marinated artichoke hearts.
3. Place the balls of burrata cheese on top. Then, carefully cut the burrata cheese in half (giving you 4 equal parts) and gently spread open each one. Add the chopped fresh basil on top, along with some freshly cracked black pepper, to taste.
4. Finally, drizzle with the balsamic glaze over the entire salad. Then serve! Best when served immediately.
