Peanut Butter and Jelly…

We all can relate to eating peanut butter and jelly sandwiches as kids.  It brings us back to our childhood memories; even Italian-American kids ate them.

So when I decided to make a batch of peanut butter cookies, the idea to make them sandwich cookies came to mind. 

These little cookies are not only easy to whip up, but they’re a favorite any time of the year. 

They’re easy to serve family and friends at casual gatherings, and best to serve them at special occasions and holidays.

Plus, these little bite-sized sandwich cookies are the perfect size when you just need something sweet.

Ingredients Needed to Make Peanut Butter and Jelly Sandwich Cookies:

For our peanut butter and jelly sandwich cookies recipe, you will need the following ingredients:

  • creamy peanut butter
  • brown sugar
  • one egg
  • baking soda
  • grape jelly

How to Make Peanut Butter and Jelly Sandwich Cookies?

If this is your first time making these cookies, no worries, they are straightforward to follow and make. Don’t forget our full recipe card is located at the bottom, too.

  1. Step 1:  Mix all the ingredients in one mixing bowl.

2. Next Step:  Using your hands, make small balls out of the cookie dough.  Place them onto a baking sheet.

3. Step 3:  Use a small fork to lightly press down on each ball.

4. Now Bake:  Bake cookies in a preheated oven at 350°F (180 °C) for about 8 minutes, until golden.

5. Final Step:  Once cookies have cooled down, spread a little grape jelly on the bottom of a cookie and close it with the bottom of a second cookie to sandwich.

To Store and Freeze:

  • Store these little sandwich cookies in a sealed container.  They will stay fresh for more than a week (if they last that long).
  • Also, they freeze well, too.  You can store them in zip-lock bags or in a plastic container.  They will freeze well for up to 2 months.

5-Ingredient Peanut Butter and Jelly Sandwich Cookie are so darn cute, delicious tasting, and melt-in-your-mouth bite-size cookie sandwiches! Little peanut butter cookies sandwiched with a spread of grape jelly in between them will make everyone go bonkers over them!

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup packed brown sugar ( light or dark)
  • 1 large egg
  • 1 tsp. baking soda
  • 1/3 cup Concord grape jelly

Instructions

  1. Preheat oven to 350 degrees F (180C).
  2. In a mixing bowl, stir together peanut butter, brown sugar, egg, and baking soda. Stir with a fork or with a whisk vigorously, until fully incorporated.
  3. Roll dough into small balls, the size of a nickel, about 3/4-inch. And transfer to an ungreased baking pan, spacing them about 2 inches apart.
  4. Take a small fork and gently press down on top of each ball.
  5. Bake until cookies are puffed and starting to brown around the edges, about 8 minutes. Let them cool for 5 minutes on the baking sheets, then transfer to a wire rack to cool completely.
  6. Spread about 1/2 teaspoon of grape jelly on the bottom of one cookie and sandwich with the second cookie.
  7. Yields: about 22 to 24 sandwich cookies
