This is an apple crumb coffee cake made with wholesome, all-natural ingredients, and it’s perfect for serving in the morning. It’s also a fantastic snack for kids coming home from school.
On weekends, we like to have something to serve with our morning coffee. But these days, most supermarkets, including Whole Foods, sell cakes loaded with chemicals and mostly “unwanted” ingredients. Who needs that? …No thanks!
So I decided to make my very own apple crumb coffee cake – the old-fashioned way! With wholesome ingredients and the ones we already have on hand, this recipe is the ideal option!
Let me tell you, after making it 3 times, I got it down to perfect! And, everyone LOVED it! Loaded with fresh chopped apples and a delicious cinnamon crumb in the center and on top. YUM!

Ingredients You’ll Need:
For this recipe, you will need pantry ingredients such as all-purpose flour, brown sugar, granulated sugar, salt, baking soda, and baking powder. Plus, you will also need some olive oil, melted butter, eggs, vanilla extract, and sour cream.

How to Make Apple Crumb Coffee Cake:
Ok, let’s go through the steps so you can understand what’s involved before you start. Here are our step-by-step directions on how to make this apple crumb coffee cake:
- Peel and Chop the Apples: Use a cutting board to chop the apples into small pieces. Then set them nearby. QUICK NOTE: I had small organic honey crisp apples on hand, but you can use any apple with this recipe.

2. Make the Crumb Mixture: Stir together the sugars, flour, cinnamon and nutmeg. Then melt butter and stir until the mixture is evenly moist. Set it aside.

3. Make the Cake Batter: In a large mixing bowl, beat all the ingredients required for the batter in a bowl.

4. To Assemble It: Spread only half the cake batter into a thin layer on the bottom of the prepared cake pan. (Take your time to spread a thin layer, the batter will be very thick).
- Then scatter on top with about 1 cup of the crumble. Next, scatter the chopped apples over the crumble.

Finally, spread the remaining half of the cake batter over the apples, followed by the remaining crumble mixture on top.
**IMPORTANT NOTE: The cake batter will seem very thin and not enough to cover the apples. But, trust me – it works and bakes just fine.

5. Bake and Glaze the Cake: Bake the cake for about 35 to 40 minutes in a preheated oven of 350 degrees F. (Check the cake at 35 minutes, with a toothpick).
- Remove from oven, and prepare the glaze. Then drizzle the glaze over the cake and serve.
For Storing: Cover the cake with a sheet of aluminum foil and keep it at room temperature to maintain moisture and freshness. Also, you can transfer any leftover cake to a sealed container. It will remain fresh at room temperature for several days.

- 1 cup powdered sugar, or more as needed
- 1 Tbsp. of milk or water, and extra as needed
Instructions
- First, preheat your oven to 350 degrees F. ( 180C). Next, grease a 9 x 13 baking pan and set it aside.
- Make the Crumb Mixture: In a medium-sized mixing bowl, stir together 1 + 3/4 cups of flour, both sugars, salt, cinnamon and nutmeg. Make a well in the center and add the vanilla and melted butter. Mix with a fork until the mixture is evenly moist and very crumbly. Set it nearby.
- For the Cake Batter: In a large mixing bowl, beat olive oil with sugar until fluffy. Add the eggs and beat until creamy. Beat in the vanilla and sour cream until well combined. Next, beat in 2 cups of flour, one cup at a time. Then beat in baking soda, baking powder, and salt until well combined.
- To ASSEMBLE: Spread only half the batter into a thin layer on the bottom of the pan. Take your time spreading it, the batter will be thick and gooey, Scatter about 1 cup of the crumble mixture. Then scatter with the chopped apples on top. Spread the remaining batter over the apples ( spread it evenly). Then scatter on top with the remaining crumble.
- BAKE on the center rack, for 35 to 40 minutes, or until a toothpick is inverted and comes out clean.
- When the cake is done, remove it from the oven and set it aside to cool. Meanwhile, make the glaze in a small bowl: stir the powdered sugar with water until it's thick and smooth. Drizzle the glaze over the cake. Cut it into pieces. Serve warm or at room temperature.
Notes
Keep in mind, that the batter will be very thick and seem to be very thin, but it will rise in the oven. Also, take your time to spread the batter evenly over the apples.
TO STORE: Cover the cake with a sheet of aluminum foil at room temperature to keep it moist and fresh. Or you can transfer any remaining cake to a sealed container. It will stay fresh at room temperature for days.
