Pureed Creamy Sweet Potato Soup… and Better!
Ok, here are some of the reasons we love this soup! Sweet potatoes are a delicious source of Vitamin A, which is vital to your eye health, bone development, and immune function. They are natural anti-inflammatories and contain complex carbohydrates that take longer to digest, leading to more sustained energy.
Besides the sweet potatoes, we added fresh vegetables, making this soup more flavorful and nutritious. All the more reasons to make this creamy sweet potato soup. Be sure to try our pureed curried carrot and sweet potato ginger soup recipe next!

- Next, pour in the broth and bottled water, and raise the heat to high. Add the salt, cayenne pepper, and fresh parsley. Cover, and bring it to a boil, then lower the heat to a low simmer. Simmer for 15 to 20 minutes. Turn off the heat.
- Uncover and wait until the soup cools down, use a handheld immersion blender, and slowly puree the soup directly in the pot. If you don’t have one, no worries. After the soup has cooled slightly, and do this in small batches, you can blend the soup in your blender. Be sure to hold down the lid on top, and blend on “slow speed.”
