We love fried fish once in a while, and these cod fish sandwiches turned out truly AMAZING! When it comes to making fish sandwiches, it’s all about the textures, its seasonings, and most importantly – the toppings! These are SO good, you will enjoy them as much as we do. So here’s what we can tell you about them:

  • THE FLAVOR: Juicy, tender, and delicious flavors in every bite.
  • THE EASE: This recipe is straightforward and very easy to make. Once you’ve made them for the first time, you’ll enjoy making them every time you crave them.
  • VERSATILITY: This recipe is made with cod fillets, but you can easily substitute with halibut, flounder, and tilapia.

Quick Recipes Tips

  • This recipe is for two crispy cod sandwiches, but you can easily double the ingredients for more servings.
  • We prefer to purchase the “wild-caught” cod fillets. And, the frozen packages are great! You pay a few dollars more, but it’s worth it. These are ideal since they are already perfectly pre-cut in the size that will fit a hamburger bun, or a brioche bun.
  • It’s best to remove the frozen fish from all packaging. Then place the fish into a dish, and allow it to thaw in your refrigerator overnight. Then rinse the fish and drain.
  • Also, it’s recommended to cook and consume the fish within 24 hours of thawing.
  • Do not thaw and refreeze.

Ingredients You Will Need:

For our cod fish sandwiches recipe, you will need the following ingredients:

  • 2 pieces of frozen cod fish (10.5 ounces (298g), about 1/2-inch thick, and thawed
  • For The BATTER:
  • 1 egg
  • 2 Tbsp. cornstarch
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 1/8 tsp. cayenne pepper
  • 2/3 cup panko bread crumbs
  • 1/2 cup cooking oil for frying
  • For The SANDWICH:
  • 2 hamburger or brioche-style buns – toasted
  • Thousand Island Dressing
  • Sliced Havarti Cheese
  • Sliced Dill Pickles
  • Fresh Arugula

How To Make Crispy Fish Sandwiches?

If this is your first time making these crispy fish sandwiches, no worries, this recipe is relatively easy and quick. Also, we have our full printable recipe card located at the bottom. But first, let’s go through our steps so you can understand what’s involved before you start.

  1. First, prep the fillets! Take the (already thawed) fish fillets, give them a quick rinse, and drain them. Place them onto a plate or dish, and use a paper towel to pat dry each fillet.

2. Next, prepare the batter for the fish. Use stainless steel breading pans, or a shallow dishes. Measure all the seasonings, corn starch, and one egg, and lightly beat with a fork to combine. The batter will have a deep orange-red color.

3. Meanwhile, toast your buns in a toaster oven or your oven until golden and crispy. And, set them on a platter, nearby.

4. Coat each cod fillet, first dip into the batter and coat both sides. Then dip into the panko bread crumbs, patting the fish and coating both sides.

5. Ready to Fry Them! Meanwhile, grab an 8-inch skillet, and pour about 1/2 cup of frying oil. Heat on moderate heat, for about 1 minute. Drop a few bread crumbs into the oil to see if it is ready. When ready? Carefully, add the fish fillets into the oil and fry them until golden brown, about 4 to 6 minutes per side. Then drain on a paper towel. Turn off the heat.

6. Make the Sandwiches! Place the fried fish on one side of the toasted bun. Spread some Thousand Island dressing on one side of the buns. Place a slice of cheese on top of the fish. Then a pickle, and of course, a handful of fresh arugula. Close the bun, and serve!

Ingredients

  • 2 pieces of frozen cod fish (10.5 ounces (298g) about 1/2-inch thick, and thawed

THE BATTER:

  • 1 egg
  • 2 Tbsp. cornstarch
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 1/8 tsp. cayenne pepper

COATING & FRYING THE FISH:

  • 2/3 cup panko bread crumbs
  • 1/2 cup cooking oil for frying

ADDITIONAL NEEDED:

  • 2 hamburger or brioche-style buns - toasted
  • Thousand Island Dressing
  • 2 slices of Havarti cheese
  • handful of fresh arugula
  • 2 sliced dill pickles

Instructions

  1. Use an 8-inch (or 9-inch) non-stick skillet and pour the oil into the skillet, and set it on the stove. (Do not turn on the heat yet.)
  2. TOAST THE BUNS: Use your toaster or oven to toast the buns until golden and crispy, and set them aside.
  3. PREPARE THE FISH: Drain any liquid from the fish. Then, take a paper towel and pat dry each cod fish fillet to remove any excess moisture.
  4. PREPARE THE BATTER: In a shallow dish, or a breading pan, add the one egg, corn starch, salt, garlic powder, smoked paprika, and cayenne pepper. Use a fork to lightly beat the batter. It will be thick and have an orange color.
  5. In a second shallow dish, or breading pan, add the panko bread crumbs.
  6. Take one fish at a time, and dip it into the batter, coating both sides. Then, into the panko bread crumbs and coat both sides.
  7. READY TO FRY: Turn on the heat under the skillet, and moderate heat. Allow the oil to get hot, about 1 minute. Next, test to see if the oil is ready by adding a dropping a few crumbs of panko into the skillet. If it sizzles, then the oil is hot and ready. Place a paper towel onto a dinner plate and set it aside.
  8. Next, add the cod fillets to the skillet. If the heat is too high, you can lower it to moderate-low, and fry them for 4 to 6 minutes per side, until golden brown on the bottom. Use a spatula and a fork to carefully and slowly turn each one over to fry the other side. Continue to fry until golden brown, about 4 to 6 minutes. Remove and allow them to drain on a paper towel. Remember to turn off the heat.
  9. PREPARE THE FISH SANDWICHES: Smear some Thousand Island dressing on the top of the buns. Then lay each fish onto the bottom of the bun, top each fish with a slice of cheese, a sliced pickle, and some fresh arugula. Then close the sandwich with the top, and serve.

  2. Yum i do enjoy a fish burger. Sorry, in australia we call ’em burgers rather than sandwiches. I would probably use some good old aussie fish like barramundi.
