Mini Pizza Bruschetta with Tomato and Cheese
Mini Pizza Bruschetta is a simple and delicious finger food anyone can make! With only 4 fresh ingredients, fresh mozzarella, ripe tomatoes, loaf of French bread and extra virgin olive oil, and you’ll have the BEST tasting mini pizza bruschetta’s ever!
Watch them disappear as fast as you make them! Serve them warm as an appetizer or as a side at a party! Low in calories and in fat. Great for weight watchers points program too!
Mini Pizza Bruschetta with Tomato and Cheese
- 1 pound Fresh Mozzarella- sliced
- 3 Roma Tomatoes – sliced
- 1 Baguette loaf of Bread – sliced
- extra virgin olive oil
- salt and pepper to taste
Using a large flat baking sheet – slice the baguette bread on an angle about 1/2″ thick.
Lay the bread down one at a time, side by side
Drizzle Olive Oil over the bread slices.
Drizzle salt, pepper and garlic powder over the bread.
Place baking sheet into the oven at 350 degrees for about 12 minutes or until golden brown.
Remove from oven.
Add sliced Roma Tomatoes about 1/4″ thick and place on each slice of bread, individually.
Slice Mozzarella about 1/4″ thick.
Slice Mozzarella again to fit on each slice of bread (should be long slices).
Sprinkle salt, pepper and garlic powder again.
Place mini pizza bruschetta back into the oven.
Bake at 350 degrees for 5- 8 minutes, until Mozzarella is melted.
Be careful when removing the Bruschetta from the pan, they will be hot.
