Sweet Potato Garlic Dip

Yield: 2 cups
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes

Sweet Potato Garlic Dip is smooth, creamy, and sweet, with a hint of heat. Serve it with your favorite pita bread, crackers, soft naan, or veggie sticks; it's simple and delicious for any gathering.

Ingredients

  • 4 small sweet potatoes
  • 2 heads of garlic - for garlic confit (see our notes below)
  • extra virgin olive oil
  • 1 tsp. lemon zest
  • 1 Tbsp. lemon juice
  • 1/8 tsp. ground nutmeg
  • 1/8 tsp. cayenne pepper
  • salt to taste
  • 4 Tbsp. of sour cream - and extra as needed
  • 1/2 fresh garlic clove - freshly grated (about 1/8 tsp. or more)
  • smoked paprika, as garnish
  • freshly chopped parsley, as garnish

Instructions

  1. In a medium-sized pot filled with water, add the sweet potatoes and boil for about 25 to 30 minutes, until a knife can easily slide through them. Remove and set them on a plate. Slice each potato in half to help cool them down quickly, about 5 minutes.
  2. Meantime, make the Garlic Confit: Take 2 heads of garlic, cloves are peeled with root ends trimmed and discarded. Place the cloves of garlic in a small pot, and pour enough extra virgin olive oil over them to cover the garlic. Then transfer to the stove, and on moderate heat, bring the oil to a boil. Immediately, lower the heat to the lowest, and simmer the garlic, uncovered, for 20 to 30 minutes, until softened and golden. Then turn off the heat.
  3. Place the sweet potatoes into a food processor or a mixing bowl, along with 6 to 7 garlic cloves, lemon zest, lemon juice, salt, nutmeg, and cayenne pepper. Puree until it's a creamy mixture.
  4. Grab a white bowl, and transfer the sweet potato mixture to the center of the bowl. Using the back of your spoon and start in the middle of the mashed, to and push out the creamy mashed sweet potatoes while you're turning the dish around.
  5. Take about 4 tablespoons of sour cream, and lightly grate about 1/2 of a garlic clove ( just enough to flavor the sour cream) and stir it into the sour cream.
  6. Next, spoon the sour cream in the center of the sweet potatoes, mash, and top with a sprinkle of smoked paprika, freshly chopped parsley, and transfer the bowl into your refrigerator to chill before serving.
  7. Just before serving, drizzle some extra virgin olive oil over the entire dip. And serve with your favorite crackers, pita breads, naan, or veggie sticks.

Notes

1. What to do with the extra garlic confit?

  • Best to transfer the remaining garlic confit with olive oil to a mason jar or glass container. Keep it chilled if you prefer, or keep it sealed on your counter. You can use it as a spread on crusty bread at dinner time. It is delicious. Use it in your tomato sauce, or toss them in a skillet with veggies.
  • Add some aromatics to the olive oil. Go ahead and toss in some sprigs of thyme, rosemary, peppercorns, or chili flakes to infuse with the oil. This will give more flavor to the garlic, making them more delicious when spreading on crusty bread.

2. Can we add any additional toppings?

    • Add on top some roasted pepitas, toasted sesame seeds, or even spicy seasoned nuts as garnish. It's up to you.
