Seared Marinated Artichokes… and More

Lately, we’ve been seeing seared marinated artichokes pop up on menus across upscale New York City restaurants. So, we decided to recreate them at home and serve them as an appetizer. And they turned out GREAT!

This recipe is simple and straightforward, and it comes together in just a few minutes. We love that!

Plus, using marinated artichokes makes this recipe practically effortless.

You’ll only need a few seasonings and staple ingredients to pull this off. Plus, you’ll need a block of Fontina cheese to make the cream under the seared artichokes.

We found these marinated artichokes with long stems at our local supermarket. We simply drained them, then sliced them down the middle, turned them face-down in a skillet with hot oil, and seared them for a few minutes. Then we flipped them over and seared again for a few more minutes.

At the same time, we made the Fontina cream on the stovetop and kept it warm while the artichokes seared. Next, we plated the Fontina cream, topped it with seared marinated artichokes, and served. They turned out FANTASTIC and DELICIOUS!

For dairy-free? Skip the Fontina cream and serve them seared on a plate, drizzled with extra-virgin olive oil and fresh lemon juice, and enjoy.

What are Marinated Artichokes?

Marinated Artichokes are artichokes that have been cleaned, their hard skins peeled off, and pickled in a jar with olive oil, vinegar, and seasonings. Marinated artichokes are usually added to salads or a charcuterie board.

You can find them in supermarkets, with long stems or just artichoke hearts. If you can’t find them at your local supermarket, you can purchase them on Amazon.

How to Make Seared Marinated Artichokes?

This recipe has two parts. The first part is the searing of the marinated artichokes, and the second is the creamy Fontina cheese. Our full recipe card is at the bottom, but first, let’s go over the directions so you can see what’s involved and how easy it really is.

  1. First, PREPARE the ARTICHOKES: Remove the marinated artichokes from the jar, and drain the marinade as much as possible. Transfer them to a nearby plate or cutting board, and slice each one down the center. Season with salt, black pepper, and garlic powder.

2. GRAB a SKILLET & SEAR: Drizzle some extra virgin olive oil and heat over medium-low heat. Place each artichoke face down and sear for 5 to 8 minutes, until lightly charred. Use a small spatula or fork to flip each one and sear the other side for 5 minutes or longer. Squeeze 1/2 lemon over them. Turn off the heat and keep them covered while you prepare the Fontina cream.

3. MAKE the FONTINA CREAM: In a small saucepan, on low heat, add the butter, milk, and only 4 ounces of the fontina cheese (half of the package in photo). Stir and let the fontina melt slowly. Add 3 tablespoons of milk. Taste and season with a little salt. When the cheese is completely melted and smooth, stir in 1 teaspoon of cornstarch. Turn off the heat and keep warm.

Spoon the Fontina cream onto your platter and spread it evenly.

5. SERVE: Transfer each seared, marinated artichoke and lay it onto the cream. Toss with freshly chopped parsley and serve immediately.
