But today, you’re in for a treat! This recipe for roasted artichokes is so simple, that you’ll impress your family and friends every time you make them!
How to Roast Artichokes?
The first step you will need to do is to clean your artichokes properly. And, it is best to read our how-to guide for cleaning them here: How to Clean Artichokes. Once you follow our step-by-step to cleaning artichokes, the rest is easy. And, we prefer the small artichokes.
A few ingredients are all it takes to make these chokes taste amazing!
Ingredients Overview…
For our roasted artichokes recipe, you will need the following ingredients:
ARTICHOKES: Choose fresh artichokes that are either medium-sized or small ones, these are best. The large artichokes are best for stuffing.
SEASONINGS: You will only need some salt, black pepper, and garlic powder for these to be flavorful.
BREAD CRUMBS: Choose plain bread crumbs for a nice crunch in every bite.
CHEESE: We prefer to use 2 kinds of grated cheeses. Grated parmesan and pecorino cheese, and you will only need a small amount to scatter over them.
LEMONS: Fresh lemons are a must! You will need some fresh lemon juice to scatter over the chokes, and a few slices to scatter around on the baking sheet.
OLIVE OIL: Choose a good quality of extra virgin olive oil to drizzle over the chokes just before they go into the oven to roast. Olive oil will give them flavor and keep them moist while roasting.
Directions to prepare and season them…
Once the chokes are cleaned and prepped, the rest is easy. For easy cleanup, place a sheet of aluminum foil and cover your baking sheet. (*Full printable recipe card below!)
Step 1: Rinse the cleaned chokes and drain. Then lay the chokes face-up and close to one another on the baking sheet.
Step 2: Scatter some slices of lemon around and between them.
Step 3: Scatter each choke with salt, pepper, and garlic powder.
Step 4: Then scatter over them with some pecorino and parmesan cheeses. Next, lightly spoon some bread crumbs over each choke.
Step 5: Finally, drizzle with extra virgin olive oil over each choke. Then into the preheated oven to roast!
Step 6: Roast for 15 to 20 minutes, until a fork can pierce through a few of them easily.

FAQ’s…
- Can we use the large artichokes? We prefer not to roast the large sizes and prefer to stuff and steam them. Larger artichokes take longer to roast, and more time in the prep work.
- What temperature to roast them? We prefer to roast them at 400 degrees Fahrenheit (204C).
- Do we need to dry them after rinsing and before roasting? No, the chokes need to be wet. They need the moisture when roasting.
- How long do we roast them? Roast them for about 15 to 20 minutes, until you can pierce a fork through them easily. They should be golden brown and crispy on the edges.
- How can we tell they are ready? When you can pierce a knife or fork into them easily, then you know they are ready to come out of the oven.

Roasted Artichokes

Ingredients
- 4 medium artichokes - cleaned, tips cut off, stems peeled, and sliced in half
- 2 Tbsp. grated pecorino cheese
- 2 Tbsp. plain bread crumbs
- 1/4 tsp. garlic powder
- 1 lemon - sliced into slices or wedges
- fresh lemon juice
- 2 Tbsp. extra virgin olive oil, plus extra
- salt and black pepper to taste
Instructions
- Preheat oven to 400 degrees F (204C). Place a sheet of aluminum foil on your baking sheet.
- Scatter the clean artichoke hearts facing up, but keep them close to one another.
- Scatter them with some salt, black pepper, and garlic powder. Then scatter over them with bread crumbs and grated pecorino cheese.
- Next, drizzle over each one with extra virgin olive oil.
- Roast for 15 to 20 minutes until the chokes are golden brown and crispy, and you can pierce a fork through them easily.
- Drizzle some additional olive oil, and some lemon juice and garnish with freshly chopped over them. Transfer them to a serving platter, and serve. Best served warm.
Notes
TIPS: Cleaning them properly is the key to making these artichokes tender and delicious after roasting. But, if they are not cleaned properly, they will become tough and chewy and not good.
