Chunky Avocado Salad and Salsa

Our Chunky Avocado Salad and Avocado Salsa are two recipes for delicious-tasting and healthy salads. These recipes only takes a few minutes to prepare are ideal to serve as a side to compliment any grilled steak or seafood entrรฉe.

Chunky Avocado Salad

An excellent salad made with chunks of fresh avocado, freshly chopped tomatoes, black olives, and green onions and tossed with a lemon vinaigrette.

Our Easy Avocado Salsa Recipe:

This avocado salad is really versatile!  You can change it up and add different ingredients to this salad, making it your very own.

  • Don’t be afraid to add in some black beans, sweet corn, red onions, maybe some fresh chopped cilantro into the mix.  
  • One can get very creative here.  Have fun making it!
  • Plus, this avocado salad can be easily turn into a Chunky Avocado Salsa!

Our Avocado salsa is kid-friendly too.  Sometimes I will make an avocado salsa and serve it with tortilla chips or pita crackers.  It gives me some time to prepare dinner while the whole family snacks on the salsa, and keeps them happy!

Chunky Avocado Salad and Avocado Salsa

Chunky Avocado Salad and Avocado Salsa ~ are two recipes for our chunky avocado salad and avocado salsa whichย only takesย a few minutes to prepareย andย will compliment any grilledย steakย or seafood entrรฉe'.

Total Time 10 minutes

Ingredients

  • 2 to 3 medium avocados- coarsely chopped
  • 2 to 3 tomatoes- chopped
  • 1/2 cup black olives - chopped
  • 1/3 cup green onions -chopped
  • 1 lemon juiced (about 2 Tbsp.)
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 Tbsp. extra-virgin olive oil

Instructions

  1. FOR CHUNKY AVOCADO SALAD:
  2. Whisk together lemon juice, olive oil with salt and pepper.
  3. Cut avocados and tomatoes into bite-size pieces. Place them into a serving bowl.
  4. Add the chop olives and green onions.
  5. Pour the lemon vinaigrette into the bowl and gently toss to coat. Serve immediately.

FOR AVOCADO SALSA:

Use the same ingredients as above and add in additional ingredients, such as: black beans, sweet corn, red onions, and some fresh chopped cilantro into the mix.  

Notes

Best to keep avocados in your refrigerator before using them, this way they are already chilled and ready to use.

Best to have all ingredients chilled before making the salad or salsa.
