Chicken Fajitas Sheet Pan Dinner

The new year is in full swing, and part of everyday life is figuring out what to make for dinner…especially something the whole family will enjoy. Last night, my family was craving fajitas, so I decided to switch things up and make chicken fajitas on a sheet pan instead of the stovetop.

And I have to say, they turned out absolutely fantastic!

The seasonings gave our chicken fajitas their delicious, smoky flavors.

And, the best part of this recipe? Everything is baked at once in the oven, giving me hands-free time to do something else.

  • Chicken Cutlets: We used chicken cutlets and found it to be easier to cut each cutlet into long strips.
  • Olive Oil or Avocado Oil: To keep the chicken and veggies moist while baking. We don’t want them to try out.
  • Seasonings: To make the overall veggies and chicken spicy, we used: chili powder, ground cumin, garlic powder, smoked paprika, crushed red pepper flakes, and salt.
  • Lime Juice: To tenderize and give the veggies and chicken a bright, zesty flavor.
  • Onion: Thinly sliced onion will give additional flavor to the chicken and sweet peppers.
  • Sweet Mini Peppers: Seedless peppers are best! And, we sliced them in half so they bake evenly.
  • Extra Limes and Some Cilantro: For garnishing, it’s a good idea to have extra limes and even cilantro to garnish when serving.

How to Make Chicken Fajitas Sheet Pan Dinner?

Let’s discuss how to make it. Don’t forget, our full recipe card is located at the bottom.

First, preheat your oven to 425 degrees F. Then grab a large baking sheet (10″-15″) and set it nearby.

In a large mixing bowl, add the chicken strips and pour in the olive oil and lime juice, salt, and some black pepper. Measure and toss in all the spices. Toss until well combined, using two spoons until well combined. Set the bowl aside, and allow the chicken to marinate while you prep the onion and the mini peppers.

Next, Slice the Onion: Thinly slice the onion, and add it on top of the chicken mixture. Toss again to combine.

Prepare the Mini Peppers: Rinse the peppers and drain them in a colander. Then slice off the ends of each mini sweet seedless pepper, and discard them. Slice the peppers in halves or quarters, lengthwise. Add them to the chicken mixture, and slowly toss again, all together until the entire mixture is well combined.

Transfer the Entire Mixture for chicken fajitas to a Baking Sheet. Spread them out (the best you can) into a single layer. Don’t worry if they overlap; they will shrink as they bake.

Bake at 425F degrees for 25 to 30 minutes, until you see they are slightly charred at the ends. Remove from oven, and serve with warm tortillas and your favorite sides.

Just before you remove the chicken fajitas, at least 3 minutes before they are ready, add a small sheet pan with your tortillas on it, and place them into the oven to warm.

Serve them with warm tortillas, and allow everyone to fill them with their favorite toppings. Plus, you can serve chicken fajitas with any of these as sides:

Recipe Tips

  • You can make this recipe with chicken breasts or chicken tenderloins. Be sure to slice the breast into long strips to guarantee they will cook evenly.
  • If you want the veggies and chicken a little more charred, you can broil them for a minute or two. But keep an eye on them, you don’t want to burn them completely.

Storage

Keep any leftovers in a sealed container and in the refrigerator. They will stay fresh only for up to 3 days. After that, discard and make a fresh new batch when you’re in the mood for them again.

Ingredients

  • 1 pound (16 ounces or more) chicken cutlets sliced into long strips
  • 1/4 cup olive oil or avocado oil
  • 1 + 1/2 teaspoon of chili powder
  • 1 teaspoon ground cumin
