And, we ‘re having company tonight with some friends. I want to make a quick dessert that is simple and one that I could whip up easily right before my guests arrive. I had to think quick! So I decided to make chocolate pudding and raspberry mini cups! I love the flavors of chocolate and raspberries together.
A delicate dessert, creamy chocolate pudding with a touch of raspberry in individual pastry shells, which I call “cups” is just the right amount of sweetness and size needed after dinner. A perfect sweet treat that is quick and easy to make, especially when your entertaining and don’t have a lot of time.
I found these frozen mini fillo shells in the frozen section, a container of all ready made chocolate pudding and fresh raspberries. And in a few minutes – WHA-LA! Chocolate pudding cups ready for dessert!
These are so cute and bite size. Best of all, no need for plates or spoons when serving. PERFECT!
Sprinkle some powdered sugar on top just before serving. They’re so pretty, they even make an elegant presentation. Have a wonderful Valentine’s Day everyone!
Easy Chocolate Pudding and Raspberry Mini Cups
- 2 (15 each) packages of Athens Mini Fillo Shells
- 1 container of Cozy Shack Chocolate Pudding
- fresh raspberries for garnish
- white powdered sugar to garnish
Open the packages of mini fillo shells, allow them to defrost for a 1 minute.
Take a very small teaspoon or espresso spoon, and spoon a small amount of pudding into each shell. Filling each shell about 3/4 with the pudding.
Be careful not to over fill.
Top each one with one raspberry. Garnish with a sprinkle of powdered sugar on top.
Immediately refrigerate. Best to prepare just before guests arrive.
When ready to serve, display on a lovely platter and serve.
Makes: 30 mini chocolate pudding cups
