Tuscan Swiss Chard and Beans Soup

Tuscan Swiss Chard and Beans Soup is a blend of freshly chopped Swiss chard and cannellini beans. Healthy, easy to make, and the perfect soup to make for a weeknight meal.  A simple combination of healthy greens, and white beans, along with 5 additional ingredients, makes this soup totally delicious and ready to serve in 30 minutes!

It’s SO DELICIOUS… you’ll want a second bowl.

It is similar to our mom’s escarole and beans soup, only this Swiss chard, and beans soup is sweeter tasting, more flavorful, and melts-in-your- mouth.

 

 

What is Swiss Chard?

Swiss chard is a leafy green vegetable, closely related to spinach, but much sweeter in flavor. 

Their long stalks come either in white or rainbow color but are not as tough as kale.

Swiss chard is a wonderful green vegetable to saute or steam with other vegetables to create a flavorful broth.

What To Look For When Purchasing Swiss Chard? 

When looking for Swiss Chard, you should look for:

  • leaves that are a bright green color, not brown.
  • their white stalks should be long and thin (not wider than 1 inch).
  • leaves should be crisp and healthy-looking – not wilting.
  • no yellowing or discoloring found

When Shopping for Swiss Chard….here’s a Great Tip!

When I can’t find “fresh- clean-looking” Swiss chard at the market, I ask someone in the produce section if they are willing to bring out a new box of fresh ones.  And without any hesitation, they comply.

How to Make Tuscan Swiss Chard and Beans Soup?

As soon as I get home, I always get started with prepping my Swiss chard for this soup.

1.  For this recipe, it’s best to finely chop Swiss chard, about 3/4 -inch to 1-inch wide, especially the white stems.

2.  Next, give a good rinse in a tall pot or large bowl.  Then drain in a colander and set the chard aside.

3.  Open the cans of beans and rinse them under cold water, then drain.

4.  Then get started on making the soup.

Directions to make our Soup…

1.  First, saute some garlic in olive oil and add pepper flakes.

2.  Toss in the chopped and rinsed Swiss chard, then the beans followed by the seasonings, broth, water, and chopped tomato.

3.  Cover with a lid, and allow the soup to simmer for a few minutes more until it’s ready!

Variations and Tips…

  • Great Northern beans will work as well with this recipe. 
  • Also, adding in 1 chopped tomato adds not only a little color but enhances the flavors in this soup as well.
  • The soup will stay fresh for up to 3 days in the refrigerator.
  • For additional flavor, drop a rind of Parmigiano-Reggiano cheese to simmer with the soup. Then remove and discard when the soup is ready to serve.
  • Use vegan cheese to make it vegan.
  • This soup is very flavorful, but if you prefer, you can serve it with grated Parmesan or Pecorino cheese or vegan cheese at the table.

Tuscan Swiss Chard and Beans Soup is made in under 30 minutes and bursts with so much flavor everyone will want a second bowl of this healthy green soup! Perfect for a light starter and easy enough to make during busy weeknights.

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes

Ingredients

  • 2 bunches of Swiss Chard
  • 1/4 cup extra virgin olive oil
  • 4 garlic cloves - sliced
  • 1/8 tsp. crushed red pepper flakes
  • 2 cans (15-ounce) cannellini beans or great northern beans - rinsed, drained
  • 1 + 1/2 tsp. salt
  • 1/8 tsp. garlic powder
  • dash of dried oregano
  • 2 cups of water
  • 2 cups vegetable broth
  • 1 ripe tomato- chopped
  • fresh cracked black pepper to taste
  • Optional: 1 Parmigiano-Reggiano rind

Instructions

  1. Thinly chop the Swiss Chard and submerge into a large pot of cold water, rinse under running water as needed, and transfer to a colander to drain. Do the same with the second bunch. Set aside.
  2. In a large saucepot, heat olive oil over medium heat, add the garlic and red pepper flakes, and saute the garlic for 2 minutes to soften. Turn off the heat. (have the lid to the pot nearby)
  3. Toss in the wet Swiss Chard and cover with the lid. Turn back on the heat, on medium heat. Allow the chard to saute and simmer for about 5 minutes. Stirring occasionally. The liquid on the bottom with be watery and that's good. Add salt, garlic powder, and dried oregano.
  4. Add the beans. Cover again with the lid, and allow the beans to saute with the chard for 2 minutes. Add an additional tablespoon of extra virgin olive oil to the chard and beans.
  5. Pour in the water and vegetable broth and bring to a low simmer. Then toss in the chopped tomato.
  6. Cover with lid and simmer the soup for 8 minutes more. Turn off the soup. Here is where you can drop 1 rind of Parmigiano-Reggiano into the soup. Leave it in the soup for 10 minutes. It will slowly melt and give more flavor to this soup. Then fish it out and discard before serving.
  7. Taste and season with black pepper to taste. Feel free to add more salt, if you prefer.
  8. Yields: 4 to 6 servings.

  3. The soup came out great! I have so much swiss chard in my garden (all varieties) that I usually give away at least half of it to family and friends. But I am always looking for different ways of preparing it. I followed your recipe exactly this time, but I make all types of soup with it, add it to minestrone, to italian wedding and meatball soup, use it in place of escarole in a chicken soup, anything that calls for some type of garden greens. I even substitute it for spinach in quiche recipes, as well as just as sauteed with lemon, garlic, olive oil. I just don’t like it served raw in a salad.
