How to Make Fast & Easy Broccoli Fritters?

This recipe requires the following ingredients:

  • 1 pound ( 16-ounce) package of frozen broccoli florets
  • 1/2 cup all-purpose flour, for dredging (or almond flour for gluten-free)
  • 3 eggs – lightly beaten
  • 1/4 cup grated pecorino cheese or Parmesan cheese
  • 1/8 tsp. salt
  • fresh cracked black pepper, to taste
  • 1/3 cup canola oil, for frying

Directions to Make our Broccoli Fritters…

STEP 1:  THAW THE BROCCOLI…

Allow frozen broccoli florets to thaw, and drain on paper towels.  Then lay two sheets of paper towels over them and gently press down on top to help absorb some of the liquid as much as possible.

STEP 2:  EXAMINE THE BROCCOLI…

Remove any tiny or too small pieces and save those for a future recipe, like soup, or maybe an omelet. Very small pieces of florets are not worth the effort of dipping and frying.

*NOTE: But definitely save them for something else, and use them within a day or two.

THIRD STEP:  PREPARE THE INGREDIENTS…

Next, let’s prepare the egg mixture in one small bowl. Stir some salt, black pepper, and grated cheese with the eggs.

Next, place some flour in a second bowl.

STEP 4: HEAT SKILLET, DREDGE & FRY:

Pour some vegetable oil into a skillet and heat until the oil is hot.  When the oil is hot, take each broccoli floret, one at a time, and gently twirl it into the flour coating all sides.

NEXT, twirl each one in the egg mixture and place it directly into the skillet.  Repeat this process and fry a few at a time.

Use kitchen tongs to gently turn them over, about 2 to 3 minutes per side, until they are golden brown.

FINAL STEP: REMOVE and DRAIN:
