Ingredients Needed For our Asparagus and Basil Soup
Here are the ingredients you will need for our soup, plus salt, cayenne pepper, and black pepper as the seasonings. Also, we add some milk, not a lot, to lighten the color of the green and tone down the flavor of the asparagus. NOTE: The milk is optional, and can be left out for those who prefer dairy-free!

How To Make Asparagus and Basil Soup?
This soup is straightforward, and anyone can make it. And requires no special skills. Our full printable recipe card is located at the bottom. But let’s go over the steps quickly so you can understand what’s involved.
- First, sautรฉ the vegetables for about 5 minutes. Next, add the water and seasonings. Then toss in the fresh basil at the end.
- Next, allow the mixture to cool a little before pureeing the mixture. Then, taste and adjust the seasonings.

Plus, for this recipe, you will need a countertop blender or a handheld immersion blender to puree the vegetables into a silky-smooth texture.

Important Recipe Tips
- If you notice the flavor of asparagus is overpowering, go ahead and toss in additional fresh basil, mincing it with a knife (you don’t need to puree it). Stir and taste the soup again. You can keep adding fresh basil into the soup, stirring, and tasting again until you get the right balance. The flavor of basil should be subtle but not overpowering.
- If the soup is too thick, you can stir in some water.
- Omit the milk for dairy-free, or you can substitute with coconut milk.
- If you prefer some texture to the soup, you can save two asparagus spears and finely chop them, adding them to the soup at the very end. This will give you a nice texture to the soup, plus additional asparagus flavor.
Storing and Freezing Tips
Store the soup in an air-tight container and keep it chilled in the refrigerator. It will stay fresh for up to 3 days. And, it freezes beautifully. Be sure the soup cools completely before storing and freezing.

Asparagus and Basil Soup
Asparagus and Basil Soup is silky smooth and delicious tasting. A wonderful balance of fresh asparagus and fresh basil flavor in every spoonful makes this an ideal soup to enjoy all season long.
Ingredients
- 1 pound (16ounces) fresh Asparagus
- 2 small carrots (about 3/4 cup) - peeled and chopped
- 3 stalks of celery (1 cup) - sliced
- 1 small onion - chopped
- 1 large potato - peeled and chopped
- 1/4 cup extra virgin olive oil
- 2.5 cups of bottled water
- 1 tps. salt
- 1/8 tsp. of cayenne pepper
- 1/2 cup packed fresh basil, (large stems removed), plus extra to taste, & garnish
- optional: 1/4 cup whole milk
- some fresh cracked black pepper, to taste
Instructions
- In a 4-quart saucepot, pour in the olive oil and toss in the chopped carrots, celery, onion, and potato. Saute the veggies for 5 minutes over moderate heat, stirring occasionally.
- Meanwhile, rinse the fresh asparagus spears, break off the stalk ends, and discard them. Then chop them into pieces and add them to the pot.
- Pour in the water, and add the salt, cayenne pepper, and fresh basil. Cover with a lid, bring to a boil, then lower the heat and simmer for 10 minutes. Stirring occasionally. Turn off the heat and allow the soup to cool for 15 minutes before pureeing the mixture.
- Next, use a hand-held immersion blender to puree, or you can use your countertop blender. NOTE: If you are planning to use a blender, be sure to pour only small amounts of the mixture into the blender, cover with the lid, then puree on the "lowest speed" and in small batches at a time.
- Optional: Stir in 1/4 cup of whole milk. Taste and adjust for salt. (See our notes below) Then serve. Into individual soup bowls. Here, if desired, you can add some fresh cracked black pepper on top of each bowl when serving.
