Making this healthy apple bok choy salad was very easy!  This salad has a crunchy texture with sweet and tangy flavors from only 2 ingredients, Granny Smith apples and bok choy.

Over the holidays, Liz and I attended our friend Tanya’s annual cookie exchange party where she made and served this apple bok choy salad.  After one bite, we were all so wowed!

And when something tastes this good, it always motivates me to make it.

So I called Tanya for the recipe and then asked her if she used any fancy kitchen gadget to slice the apples and bok choy so thinly.  She said no, only a knife!  Perfect!

Apple Bok Choy salad is a nice change from other salads.  And, this one is a definite winner!  Even though the appearance of this salad is not your ordinary looking salad.

Some of you may even think it’s a cole slaw salad rather than a regular salad, but hey – it doesn’t matter whether you call it a slaw or a salad, this healthy apple bok choy salad will be your new favorite thing!

Trust me, Healthy Bok Choy Salad is SO good and one so different, you’ll be glad you found this recipe as much as I did!  This salad is best served chilled.

This Healthy Apple Bok Choy Salad is easily made with thinly sliced granny smith apples, bok choy, extra virgin olive oil, apple cider vinegar and salt. Simple, easy and amazingly sweet and tangy tasting!
  • 2 Granny Smith apples- thinly sliced into sticks
  • 1 bulb of Bok choy- washed, drained, spinned, thinly sliced
  • ¼ cup apple cider vinegar
  • ¼ cup extra virgin olive oil
  • ⅛ tsp. salt
  1. Place thinly sliced apples and bok choy into a large salad bowl.
  2. Add the apple cider vinegar, olive oil and salt.
  3. Toss to combine. Refrigerate for at least 1 hour before serving.
  4. Serves 6
