Oven-Fried Sweet Potatoes

Oven-Fried Sweet Potatoes are the easiest side dish you’ll ever make!  All you need is a few sweet potatoes, olive oil, dried herbs, and a piping hot oven.  No need to use the fryer with this recipe, just cut each potato into wedges and bake for 20 minutes and serve!

The other night we made our Turkey Burgers with Fresh Tzatziki Sauce and decided to make these oven-fried sweet potatoes as a side dish for dinner, and my family went BONKERS!

These sweet potato fries turned out amazing!  Crispy on the outside with a soft chewy texture inside makes them the most delicious tasting sweet-potato-fries-ever!!

Oven-Fried Sweet Potatoes

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 5 sweet potatoes (about 1.5 to 2 pounds)
  • 1 tsp. garlic powder
  • 2 to 4 tsp. herbes de Provence
  • 1/2 tsp. salt
  • fresh cracked black pepper
  • 3 Tbsp. extra virgin olive oil - divided

Instructions

  1. Preheat oven to 450 degrees. Rearrange the racks in the oven, and place one rack in the middle of the oven.
  2. On a large baking pan, drizzle one tablespoon of extra virgin olive oil, and use your fingers to spread it evenly on the bottom of the pan. Set it aside.
  3. Wash and scrub each sweet potato and dry them with a paper towel.
  4. Leaving the skins on, cut the potatoes into 6 lengthwise to make long wedges, about 1-inch wide.
  5. Arrange the potatoes on the prepared baking pan in a single layer.
  6. Sprinkle over them with all the seasonings. Then drizzle with extra virgin olive oil over them, about 2 tablespoons.
  7. Bake for 15 minutes. Carefully remove them from the oven, and use kitchen tongs or slip a spatula under the potatoes to turn them over. Return them back to the oven and continue to bake for 5 minutes more.
  8. Remove and transfer to a serving platter and serve immediately.

  2. Even if they weren’t loaded with vitamins I’d still love sweet potatoes. I have trouble with getting them crispy before they start falling apart. Yours look perfect!
