Artichoke Hearts Sautéed with Baby Peas are easily made in one skillet with chopped onions, garlic, olive oil, and fresh herbs. These artichoke hearts become delicately tender with every bite while the peas are sweet and delicious, making this side dish irresistible! Best of all, it’s ready in minutes!

Artichoke Hearts Sautéed with Baby Peas…

We love artichokes and baby peas! And this was one of our mom’s common side dish when she made her parmesan-crusted chicken cutlets, or her crusted turkey cutlets. Plus, it’s an easy recipe combining these two “frozen” vegetables, and as a side dish, it will complement any entrée!

For this recipe, we prefer to use frozen artichokes. It helps speed up the cooking time. Best of all, it’s low-carb, low-fat, and keto-friendly.

This happens to be our mom’s recipe, and it is our favorite. She never measures anything, yet she amazes us with how relaxed she is when cooking and tells us – it comes with experience.

    Notes and Helpful Tips…

    • This delicious side dish is easily made on the stovetop. 
    • Plus, you can make it ahead, and reheat it before serving.
    • Nowadays, we don’t have the time, or the patience to clean “fresh” artichokes. So we prefer frozen hearts, because they’re very convenient.  

    Ingredients You Will Need:

    Find the printable recipe card with completely measurements below. For this recipe, you will need the following ingredients:

    • Frozen Artichoke Hearts: we used one package of 12-ounce bag from Trader Joe’s.
    • Frozen Baby Peas: you will need only one package, about 16-ounce.
    • Extra Virgin Olive Oil: always choose good quality olive oil.
    • Onion: one medium onion chopped to flavor the veggies.
    • Garlic: we prefer fresh garlic, but if you don’t have any on hand, you can use garlic powder.
    • Fresh Herbs: we prefer fresh Italian parsley with this recipe. It will give the veggies additional flavor and an aromatic freshness to them.
    • Seasonings: crushed red pepper (or a dash of cayenne pepper), and salt.
    • Liquid: only some water is added to the veggies to simmer and softened them.

    How To Make Artichokes Hearts Sautéed with Baby Peas?

    For this recipe, you will need ONE large non-stick skillet, and a few minutes to prep the veggies.

    1. In a large deep skillet and on medium heat. Heat olive oil with butter on medium-low heat. Add chopped onion, garlic slices, and crushed red pepper. Sauté for about 2 to 3 minutes, until the onions are softened.
    2. Add the frozen baby peas and fresh parsley. Lower the heat and simmer for 3 minutes.
    3. Add the artichoke hearts, salt and, water. Cover with a lid and raise the heat. Bring to a boil, then lower the heat and simmer for about 5 to 10 minutes, stirring occasionally.

    Artichoke Hearts Sauteed with Baby Peas are easily sauteed in a skillet with a few simple ingredients. These artichoke hearts become delicately tender to every bite while the peas are sweet and delicious, making this side dish irresistible! Best of all, it's ready in 20 minutes!

    Ingredients

    • 2 Tbsp. butter
    • 1/4 cup extra virgin olive oil
    • 1 medium onion -chopped
    • 2 garlic cloves - diced
    • 1/8 tsp. crushed red pepper
    • 1/4 tsp. salt
    • 1 package (12 ounce) Frozen Artichoke Hearts- thawed
    • 1 bag (16 ounce) Frozen Baby Sweet Peas - rinsed and drain
    • 1/4 cup fresh parsley - chopped
    • 1/2 cup water, and extra

    Instructions

    1. In a large deep skillet and on medium heat.
    2. Heat olive oil with butter on medium-low heat.
    3. Add chopped onion, garlic slices, and crushed red pepper. Sauté for about 2 to 3 minutes, until the onions are softened.
    4. Add the frozen baby peas and fresh parsley. Lower the heat and simmer for 3 minutes.
    5. Add the artichoke hearts, salt and, water.
    6. Cover with a lid and raise the heat. Bring to a boil, then lower the heat and simmer for about 5 to 10 minutes, stirring occasionally.
    7. Taste. The artichoke hearts should be softened and tender to the bite. Adjust the seasonings if needed.
    8. When they are done, turn off the heat. NOTE: Here is when you can leave them covered on the stovetop until you are ready to serve them, then reheat them before serving.
    9. Transfer to a serving dish, and serve.
