Plus, we prefer to make our own fresh basil pesto sauce (which’s nut-free) and use it over the tomatoes, topped with shredded Parmesan cheese. YUM! The best part is that the baked sliced tomatoes can be ready in 10 to 15 minutes. (We love that!)
Serve them as a side dish with any of your grilled meats, like London Broil steak, chicken kabobs, oven-roasted baby back ribs, and even fish. We love them also, along with sliced, toasted, crusty bread to create a delicious “bruschetta” with these baked sliced tomatoes.

- 3 juicy ripe tomatoes (we prefer the tomatoes-on-the-vine)
- extra virgin olive oil
- salt and black pepper
- fresh basil pesto sauce (you have on hand, or store-bought)
- grated or shredded Parmigiano-Reggiano cheese

How to Make Baked Sliced Tomatoes with Pesto & Cheese?
This is a very simple recipe, and anyone can make it. Plus, our full recipe card is located at the bottom for your convenience. But let us show you how easy it is to make this recipe.
- First, preheat the oven to 375F(190 °C). Grab a cutting board, and slice each tomato into slices. Place them onto a baking sheet, side by side, and fit as many as you can on the baking sheet.

2. Next, lightly drizzle over the slices with extra virgin olive oil, and sprinkle them with salt and pepper. Transfer the baking sheet to a preheated oven at 375°F for 5 minutes. Then remove from the oven and place them on the stove top.
3. After baking them for the first 5 minutes, spoon some pesto sauce over each tomato slice (about 1 teaspoon, or more to your liking) and top with some grated Parmesan cheese. Place the baking pan back into the oven for an additional 5 minutes or more, until the cheese is melted.

4. Remove from oven, taste one baked tomato slice. If needed, sprinkle additional salt over them. Transfer onto a warm serving platter and serve.

How to Store Any Leftovers
Store any leftover baked sliced tomatoes on a plate and cover with aluminum foil or clear wrap. You can also store them in a sealed container and enjoy them the next day for lunch, either cold or warm.
