These are the best chocolate brownie cookies ever! They are an amazing chocolate-brownie cookie recipe I accidentally stumbled upon after screwing up the ingredients for my original double-chocolate espresso cookies.
Loaded with chocolate chips, these cookies turned out so good that I had to make a second batch to make sure they were consistent with the recipe. Plus, the outcome as well.
With no chilling required for the dough, and super easy to make and bake, these chocolate brownie cookies will surely please everyone who tries them.
Well, I have to tell you, these were the BEST chocolate cookies I have ever made! Soft and chewy with a rich chocolate flavor, similar to a brownie.

Ingredients Needed For These Brownie Cookies…
For this chocolate brownie cookie recipe, you will need the basic pantry ingredients, along with some butter, one egg, and some coffee. Here are the ingredients you will need:
- baking soda
- all-purpose flour
- salt
- granulated sugar
- brown sugar
- ‘special dark’ unsweetened cocoa powder
- butter
- egg
- some freshly brewed espresso coffee (or instant, like Folgers or Medaglia D’Oro)
- chocolate chips

Best Chocolate Brownie Cookies
These Chocolate Brownie Cookies are soft, chewy and rich in chocolate flavor just like a brownie, only its in a form of a cookie. Made in one bowl and bake in minutes! Best of all, they stay soft and chewy for days!
Ingredients
- 1 stick (8 Tbsp.) unsalted butter - soft and slightly melted
- 1/2 cup granulated sugar
- 1/2 cup of packed light brown sugar
- 1 large egg, at room temperature
- 3/4 cup special dark unsweetened cocoa powder
- 1/2 tsp. baking soda
- 1/2 tsp. Himalayan salt
- 1.5 Tbsp. instant espresso powder, (or a "shot" of freshly brewed espresso coffee)
- 1 + 1/4 cups of all-purpose flour
- 1 cup of semi-sweet chocolate chips
Instructions
1. Preheat the oven to 350 degrees F. Place a sheet of parchment paper on a large cookie sheet and set it aside.
2. In one large mixing bowl, beat sugars and slightly melted butter together until smooth and creamy, about 2 minutes.
3. Beat in the egg until well combined.
4. Add the cocoa powder, salt, baking soda, and espresso coffee and beat until well combined. Beat in the flour and scrape down the sides to incorporate it into the batter.
5. Stir in chocolate chips. Use a small ice cream scoop and drop cookie dough onto your prepared cookie sheet. Or use a teaspoon and scoop a small amount, roll into a ball, and add a few additional chocolate chips on top.
6. Bake for 10 to 12 minutes, the cookies should slightly crack on top, and be soft to the touch. Remove and allow the cookies to cool on a wire rack for a few minutes.
7. Transfer to a sealed plastic container and store them at room temperature.
Yeilds: about 2 dozen cookies.
