Dairy-Free Pistachio Ice Cream -GIVEAWAY!

A no-guilt, Dairy-Free Pistachio Ice Cream is made with only 5 ingredients and has the creamy consistency and an amazing pistachio flavor that is truly awesome!  The blend of creamy coconut milk with fresh avocado, baby spinach and pistachios gives this vegan ice cream a creamy decadent flavor and richness that is unbelievable!

Well I am so excited about this one, because as a parent, I am thinking, wow this is a great idea for my kids and even my grandkids to eat some veggies by disguising them as ice cream!

I was so inspired the other day when I was strolling through Whole Foods and noticed a promotion was going for selling Vitamix machines.  

Even though I don’t own one yet,  my sister Liz does and swears by it!  Which is why I had to share this recipe with you!  

This recipe for creamy ice cream is one you have to serve immediately, more like a soft-serve ice cream; which is really great because you can keep making batches of it and make as much as you want!

How To Make Dairy-Free Pistachio Ice Cream?

For this recipe, you will need the following ingredients:

Dairy-Free Vegan Pistachio Ice Cream – Only 5 Ingredients

  • 1 cup coconut milk creamer, French vanilla flavor

  • 1/4 of fresh avocado

  • 1 to 2 Tbsp. agave syrup

  • 3 ounces of pistachios

  • 1 handful fresh baby spinach

  • 3 cups ice cubes

Directions to make Dairy-Free Pistachio Ice Cream:

STEP #1: You will need a very good blender or a Vitamix machine is best to make this ice cream.


STEP #2: Add the first 5 ingredients into the blender or Vitamix machine.  For easy blending, place liquids in first and add in the veggies last.

STEP #3: Blend on the highest speed for about 2 minutes.  Then gradually add 3 cups of ice. 

*QUICK NOTE: If you are using the Vitamix, use the stick to push down the ice as its blending.

*NOTE: If you don’t have the Vitamix machine, omit the ice cubes and blend all ingredients until pureed.


Then slowly add in the ice cubes until you reach a thick and creamy texture like ice cream.

Serve immediately. Yields: about 4 cups

I have to tell you, pistachio is one of my favorite flavors and this was the best tasting pistachio ice cream I have ever tasted.  By far!  This dairy-free pistachio ice cream is so heavenly creamy, its ice cream parlor worthy!

  3. Wow, this ice cream looks very interesting, and I love the fact that it can be made and eaten right away. it's like a smoothie in that sense. I made a batch of chocolate ice cream with Oreos yesterday that we had to freeze for 3-4 hours and it was so hard waiting. My kids would prefer an ice cream that they could dig their paws into right away.
    I already follow you gals via email because that is where I follow all my favorite blogs. I like the email route! I'm going to like you on facebook as well. I'm never on twitter and actually don't get really get twitter. To me it's like texting to strangers and who knows who sees your tweet when there are 12,000 other tweets going on at the same time. It's mind boggling.
    BTW, I LOVE my vitamix and I use it for everything and at least once or twice a day. It's the best for pureeing soups!
    Ok, my favorite ice cream hands down is chocolate.
