EASY Pumpkin Muffins with Icing

EASY Pumpkin Muffins with Icing are made in one bowl and need only a good whisk to blend all the ingredients, then bake for 25 minutes!  So easy.  Plus, the icing is made with 2 ingredients! Fall is a wonderful time for warm muffins… oh, what could be better?

Easy Recipe for Pumpkin Muffins…

  • This is a quick and easy recipe.
  • These easy pumpkin muffins are super moist, made with warm spices, and topped with sweet icing with a sprinkle of ground cinnamon on top.
  • This is an old recipe given to me many years ago by my son’s nursery school teacher.ย  I modified the original recipe by omitting some of the sugar and some of the butter.

Fresh Pumpkin Puree…

A few years ago I posted  How to Make Fresh Pumpkin Puree, and around this time of year, some of my pumpkins come back into the kitchen to get worked on. Yep…I never let a good pumpkin go to waste! The large ones that get carved into spooky faces are the ones we take the seeds out to roast and serve as a healthy snack. The smaller ones get baked into fresh homemade pumpkin puree.

I LOVE this time of year when I can bake and freeze homemade pumpkin puree, knowing that I will have it on hand especially, for our annual Thanksgiving Feast.

Besides, I will keep a can of pumpkin puree around (even though it’s not my favorite) just to have it on hand.
