EASY Pumpkin Muffins with Icing
EASY Pumpkin Muffins with Icing are made in one bowl and need only a good whisk to blend all the ingredients, then bake for 25 minutes! So easy. Plus, the icing is made with 2 ingredients! Fall is a wonderful time for warm muffins… oh, what could be better?

Easy Recipe for Pumpkin Muffins…
- This is a quick and easy recipe.
- These easy pumpkin muffins are super moist, made with warm spices, and topped with sweet icing with a sprinkle of ground cinnamon on top.
- This is an old recipe given to me many years ago by my son’s nursery school teacher.ย I modified the original recipe by omitting some of the sugar and some of the butter.
Fresh Pumpkin Puree…
A few years ago I posted How to Make Fresh Pumpkin Puree, and around this time of year, some of my pumpkins come back into the kitchen to get worked on. Yep…I never let a good pumpkin go to waste! The large ones that get carved into spooky faces are the ones we take the seeds out to roast and serve as a healthy snack. The smaller ones get baked into fresh homemade pumpkin puree.
I LOVE this time of year when I can bake and freeze homemade pumpkin puree, knowing that I will have it on hand especially, for our annual Thanksgiving Feast.
Besides, I will keep a can of pumpkin puree around (even though it’s not my favorite) just to have it on hand.

Anyway, after baking these pumpkin muffins for so many years, we are so happy to finally get the chance to share this one with you!

Ingredients for EASY Pumpkin Muffins with Icing:

3 + 1/2 cups all-purpose flour

2 cups (packed) light brown sugar

1 tsp. salt

2 tsp. baking soda

1/2 tsp. baking powder
-
3/4 cup melted butter (1 + 1/2 sticks)

2 eggs
2 cups mashed pumpkin
-
2/3 cups water
-
1 tsp. ground cloves
-
1 tsp. ground nutmeg
-
2 tsp. ground cinnamon
Directions to make Easy Pumpkin Muffins with Icing:
1. Mix all the dry ingredients in a large mixing bowl.
2. Next, make a well in the center, and add pumpkin puree, eggs, water, and butter.

3. Whisk the ingredients until well blended. Then whisk for a few minutes more.

4. Using a muffin pan lined with paper, fill each muffin cup 3/4 with the mixture. Gently sprinkle with some cinnamon on top of each muffin.

5. Preheat oven to 350 degrees F (180C).
6. Bake muffins for 20 to 25 minutes, until the toothpick comes out clean. Allow the muffins to cool before icing them. Yields: 24 to 26 Muffins

Basic Icing:
- 2 cups confectioners sugar
- 2 Tbsp. plus 1 tsp. of milk
Directions To Make the Icing:
1. Stir together in a small bowl, and spread icing on the muffins using a knife.
2. Lightly sprinkle some ground cinnamon over the muffins.
FAQ’s
- Can we use canned pumpkin with this recipe? Yes, you can, but be sure it is not the one for pumpkin pie filling.
- What can we substitute for butter? You can use olive oil, or extra-virgin olive oil in place of butter.
- Can we use pumpkin spice instead of nutmeg and cloves? Yes, you can use 2 teaspoons of pumpkin spice along with 2 teaspoons of cinnamon, and omit the nutmeg and cloves.
Tips to Store and Freeze…
- Store the muffins in an air-tight container and leave them on the counter covered with aluminum or clear wrap. Or refrigerate them. They will stay fresh for up to 3 days, and longer if kept chilled in the refrigerator.
- Make sure the muffins are completely cooled before freezing. Place them into a plastic container, and freeze them. They will freeze beautifully.
