EASY Pumpkin Muffins with Icing is made in one bowl and needs only a good whisk to blend all the ingredients, then bake for 25 minutes!  So easy.  Plus, the icing is made with 2 ingredients! Fall is a wonderful time for warm muffins… oh, what could be better? 

 

 

This is a quick and easy recipe I’d like to share with you!  So come along with me in the kitchen!

A few years ago I posted  How to Make Fresh Pumpkin Pureeand around this time of year and before Halloween, some of my pumpkins come back into the kitchen to get worked on. 

Yep. I never let a good pumpkin go to my waist!

The large ones that get carved into spooky faces and those are the ones we take the seeds out to roast and serve them as a healthy snack.  The smaller ones get baked into fresh pumpkin puree.

 

I LOVE this time of year when I can make and freeze homemade pumpkin puree, knowing that I will have it on hand especially, for our annual Thanksgiving Feast.  And of course, I will keep a can of pumpkin puree around (even though it’s not my favorite) just to have it on hand.

 

These muffins are super moist, made with warm spices, and topped with sweet icing with a sprinkle of ground cinnamon on top.  As we approach the holidays,  I can’t stop thinking about having some warm and moist pumpkin muffins with icing with our morning coffee!

This is an old recipe given to me more than twenty years ago from my son’s nursery school teacher.  Only recently, I modified the original recipe a little by omitting some of the sugar and some of the butter.

We are always trying to lower some of the calories and fat from our original recipes, and without sacrificing taste and flavor.

Anyway, after baking these pumpkin muffins for so many years, we are so happy to finally get the chance to share this one with you!  I hope you will enjoy this one as much as we do!

Ingredients for EASY Pumpkin Muffins with Icing:

  • 3 + 1/2 cups all-purpose flour

  • 2 cups (packed) light brown sugar

  • 1 tsp. salt

  • 2 tsp. baking soda

  • 1/2 tsp. baking powder

  • 3/4 cup melted butter  (1 + 1/2 sticks)

  • 2 eggs

  • 2 cups mashed pumpkin

  • 2/3 cups water

  • 1 tsp. ground cloves

  • 1 tsp. ground nutmeg

  • 2 tsp. ground cinnamon

 

Directions to make Easy Pumpkin Muffins with Icing:

Mix all dry ingredients together in a large mixing bowl.
Make a well in the center, add pumpkin puree, eggs, water, and butter.

 

 

Mix well with a large spoon until well blended.  Then whisk for a few minutes more.

 

 

Using a muffin pan lined with paper,  fill each muffin cup 3/4 with the mixture.  Gently sprinkle with some cinnamon on top of each muffin.

 

 

Preheat oven 350 degrees.

Bake muffins for 25 minutes.  Allow the muffins to cool before icing them.

 

Basic Icing:

  • 2 cups confectioners sugar

  • 2 Tbsp. plus 1 tsp. of milk

Stir together in a small bowl, and spread icing on muffins using a knife.
Lightly sprinkle some ground cinnamon over the muffins.
Store in an air-tight container or refrigerate.  You can freeze them too!

Yields: 24 to 26 Muffins

    Forget easy- that is great and all but the fact is that they look so dang irresistible and delicious that i would have to make them even if they were hard:)
