Easy Shrimp Dinners…

We enjoy making shrimp dinners from time to time. And, some of our favorites have been our classic spaghetti with shrimp marinara, and our spaghetti with shrimp, garlic, & wine. For more easy shrimp recipes, try our Spicy Shrimp Recipe (10 Minutes, and Bake Shrimp Scampi Dinner.

But this recipe is a little different, containing some veggies in it. The vegetables not only add more flavor, but it adds additional colors, and textures as well.

This shrimp dinner is SO simple and SO flavorful, you’ll want to keep this one on rotation.

What is Argentinian Shrimp?

  • The shrimp in this recipe comes from the southern coast of Argentina.
  • They are wild-caught and have a sweet-lobster-like flavor and texture, making this shrimp dinner flavorful.
  • I found them at Trader Joe’s and they come in one-pound bags in the freezer section. 
  • These shrimps are already peeled and deveined for you, making the prep work fast and easy with this recipe!

How To Make This Easy Shrimp Dinner?

Our full recipe card and video, both are at the bottom of this page. But here is a quick overview of how to make this shrimp dinner.

1.ย  The recipe starts by allowing the shrimp to defrost, then rinsing well and draining before cooking.

2. Next, fill a large pot with water, add 2 teaspoons of salt, and turn on the heat to high.

3. Place a large skillet on the stovetop.ย  Begin by slicing the garlic and chopping the peppers.

4.ย  Preheat the skillet, add olive oil and garlic, and saute garlic for about 2 to 3 minutes.

5.ย ย Next, add the roasted red peppers, shrimp, pepper flakes, some salt, and pepper.ย  Cook and stir for about 2 minutes.

6.ย The broth goes in next and simmers until the shrimp turns pinkish opaque.

7.  And finally, the butter, spinach, and cheese are added to the shrimp sauce and simmered until the spinach wilts.

Butter is tossed into the skillet with cooked shrimp and peppers. Then fresh spinach is added too.

Now the shrimp sauce is ready for the final step! 

8.ย  Cook the linguine until it’s al-dente, and transfer it directly to the skillet.

9.ย  Finally,ย the pasta is gently stirred with the shrimp sauce to flavor it and dinner is ready to serve!ย  ๐Ÿ™‚

FAQ’s and TIPS:

  1. What if we don’t have chicken broth?  You may use white wine in its place! Or use vegetable broth.
  2. What if I can’t find Argentinian Shrimp?  No worries, this recipe adapts to any frozen shrimp.
  3. Can we add additional spinach? Yes, of course! Add more spinach to your preference, as we like to say…” the more – the better!”
  4. How many days can we store leftovers? For any seafood leftovers, always transfer them to an air-tight container, and keep them chilled in the fridge, the usual is 24 hours. After that, discard, and make a fresh batch.
  5. How to thaw shrimp? Thaw shrimp the day of: Use this simple method to quickly thaw frozen shrimp: place the frozen shrimp into a large bowl with cold water. Let the shrimp sit for about 15 minutes, stirring every so often to break up any pieces that have frozen together. Give them a good rinse and drain, then proceed with the recipe as instructed.
  6. Donโ€™t over-cook. Remember that shrimp cooks up very quickly (usually just 1-2 minutes per side) for small and medium-sized. And, over-cooked shrimp will take on an unpleasant rubbery texture, so keep an eye on them!

Easy Shrimp Dinner

Easy Shrimp Dinner is a delicious meal made with already cleaned and deveined Argentinian raw shrimp, fresh spinach, butter, peppers, and cheese. Then it's tossed with linguine pasta. It's the perfect dinner and it's ready in 20 minutes!

Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 1 pound ( 16-ounces) frozen Red Argentinian Shrimp - thawed, rinsed, drained
  • 4 Tbsp. olive oil
  • 3 garlic cloves - thinly sliced
  • 1/2 cup roasted red peppers- finely chopped
  • 1/4 tsp. crushed red pepper flakes
  • 1/2 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 cup low-sodium chicken broth
  • 3 Tbsp. unsalted butter
  • 2 to 4 cups fresh baby spinach (adjust the amount to your liking)
  • 3 Tbsp. grated Parmesan cheese
  • 1/2 pound (8-ounce) linguine pasta

Instructions

  1. Take the frozen shrimps and toss them into a colander. Place the colander into your sink and run cold water over them for a few minutes. Then leave them to drain in the sink until they are completely thawed.
  2. Next, fill a large pot with water and place it on the stove-top and over high heat. Add 2 teaspoons of salt to the water.
  3. Meanwhile, preheat a large skillet on medium heat, and add olive oil and garlic. Saute the garlic for about 2 minutes, or until the garlic is golden.
  4. Add crushed red pepper flakes, shrimps, roasted red peppers, and season with salt and black pepper. Cook for about 2 minutes.
  5. Pour in the chicken broth and reduce the heat to low, and simmer for 3 minutes, until the broth reduces a little and the shrimps have turned pink-ish opaque.
  6. Toss in butter, spinach, and Parmesan cheese. Stir until the spinach wilts. Turn off the heat.
  7. Toss linguine pasta into the pot with boiling water. Cook pasta until it's al-dente, or follow directions on the package. When pasta is ready. Use a large spaghetti fork to pull the linguine out and transfer it to the large skillet next to it.
  8. Stir the linguine with the shrimps and TASTE the sauce, and adjust the seasonings with salt and pepper to your preference. Then serve!
  9. Serves 3 to 4 servings.
