Baked Chicken Nuggets the Healthy Way! Boneless and skinless chicken nuggets are lightly coated in extra-virgin olive oil and breadcrumbs, then baked until crispy golden brown. They are kid-friendly, tender, and delicious! A healthy alternative to frying them.
You can easily prepare the nuggets early in the morning, refrigerate them, then bake just before serving. It started to rain today, so I decided to take my package of chicken breasts and turn them into chicken nuggets for dinner. I served them with a large green salad as the side, making dinner fun and simple.
Baked chicken nuggets are fun finger-foods, simple enough to prep, bake and serve at anytime.
You can serve these nuggets for lunch, dinner or even as an appetizer. They go great with many dipping sauces like ketchup and even our mom’s quick marinara sauce.
All kids will love them and even adults will too!

Baked Chicken Nuggets the Healthy Way!
- 2 chicken breasts- cut into 2-inch pieces
- 1/2 cup plain breadcrumbs
- 1/4 cup grated pecorino cheese
- 1 tsp. dried parsley
- 1/3 cup extra-virgin olive oil
- Optional: black pepper
- olive oil cooking spray
Preheat oven to 400 degrees. Lightly spray a baking sheet with cooking oil.
Cut chicken breasts into 1 or 2-inch pieces.
In a tray or bowl pour the olive oil.
In a second tray, combine breadcrumbs with cheese and parsley.
Dip all the chicken pieces at once into the olive oil, then into the breadcrumbs.
Place chicken nuggets onto baking sheet.
Lightly spray them with cooking spray on top.
Bake for 20 minutes, or until golden brown. Serve!
