At times, we buy fresh herbs in small plastic packages found on a shelf in the produce section.
The EASE: This recipe is very easy to make and takes minutes. You will need to finely chop a few fresh herbs. Plus, we’ll show you step by step to make our Herb Mustard Chicken.
The KITCHEN ITEMS NEEDED: All you need is a large, deep skillet (about 10″ or 12″) to make this herb mustard chicken dinner, and a measuring cup to measure your liquids.

Ingredients You Will Need:
For our Herb Mustard Chicken recipe, you will need the following ingredients:
- 4 chicken cutlets (or 2 skinless chicken breasts, sliced in half)
- salt and black pepper to season the chicken
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- MAKE THE HERB SAUCE!
- 2 large cloves of garlic – minced or diced
- 3/4 cup white wine ( good drinking wine)
- 1 Tbsp. Dijon Mustard
- 1/2 cup chicken broth, and extra as needed (up to 1 cup)
- 2 Tbsp. butter (salted or unsalted)
- 3 Tbsp. mixture of freshly chopped herbs (Italian parsley, basil, chives, and dill)
- dash of dried rosemary
- fresh basil or parsley as garnish
How to Make Herb Mustard Chicken? (Step-by-Step!)
If this is your first time making these chicken rollatini, no worries; it is relatively easy. First, gather all your ingredients. Plus, our full printable recipe is located at the bottom. But let’s go over the steps so you can understand what’s involved before you start.
- Season the chicken cutlets with salt and black pepper on both sides. Then grab a deep, large skillet and add the olive oil and 1 tablespoon of butter. Heat on moderate heat and add the seasoned chicken to the skillet.

2. Cook the chicken until golden crisp on both sides, about 4 minutes per side. Then remove the chicken and transfer them to a nearby plate.

3. Next, add the garlic add additional tablespoon of olive oil. Simmer the garlic to fragrance the olive oil. Add the white wine to deglaze the pan and simmer the wine on low heat until it reduces a little, while stirring and scraping the bottom of the pan.

4. Now, add the additional butter, fresh herbs, and chicken broth. Stir the sauce to combine. Then add back the chicken cutlets to the skillet, simmer on low heat for a few minutes, turning the chicken over once. Taste the sauce and adjust for salt and pepper to your taste.


5. Cover the skillet with a lid to keep the chicken warm until you are ready to serve it for dinner. Then reheat the chicken on low heat (if you need to) before serving.
6. Serve the chicken on a platter, and spoon the sauce over the chicken and garnish with fresh basil on the side.

Storing and Freezing
Store any leftover chicken in a sealed container, and keep it in the fridge; it will stay fresh for up to 3 days. It will freeze well for up to one month.
