How to make our Crispy Stuffed Chicken Breasts?

For this recipe, you will need the 3 chicken breasts, plus a few Italian ingredients, and a skillet with a lid.

Ingredients for Chicken Stuffed Breasts…

  • 3 skinless, boneless chicken breasts – sliced horizontally (3/4 through)
  • 9 slices of prosciutto
  • 3 slices of provolone cheese
  • 1/2 cup of grated pecorino cheese
  • 2/3 cup of plain bread crumbs
  • 2 Tbsp. finely chopped Italian parsley
  • 1/2 tsp. garlic powder
  • 2 Tbsp. extra virgin olive oil – divided

Quick Directions: Step-by-Step… (*full recipe card below!)

1. In a mixing bowl or breading pan, stir together the bread crumbs, grated pecorino cheese, parsley, garlic powder, and black pepper.

2. Slice each breast horizontally almost through, but keep the other end intact.

NOW, STUFF THE BREASTS:

1. Add about 2 tablespoons of the breadcrumb mixture into each breast cavity.

2. Next, drizzle over the breadcrumbs with some EVOO.

3. Then add 1 slice of provolone cheese (folded in half).

4. Top with 3 slices of prosciutto.

5. Then close the breast. Stuff the remaining breasts the same way.

6. In a large non-stick skillet, heat 1 tablespoon of olive oil, carefully pick up the stuffed breasts with both hands, and place them into the skillet.

NOTE: Here is where you can sprinkle over them with some of the remaining bread crumbs/cheese mixture. Then cover with a lid.

7. Cook the breasts on moderate heat for 5 to 8 minutes per side. Use kitchen tongs to carefully turn over the stuffed breasts.

The total cooking time is about 20 to 25 minutes. Remove and serve.

1. How many servings does this recipe yield? This recipe will yield 3 servings, but you can easily double the ingredients to make additional.

2. Can we “stuff” with other kinds of cheeses? Yes, you can. Try Swiss, Gruyere, or Fontina, they will work well.

3. Can we make them gluten-free? Yes, try GF “corn” bread crumbs.

4. Is it OK if we add some white wine? We never say no to wine! Yes, you may add some white wine, but do it at the end of the cooking. This will make them juicy, and of course less crispy, but that’s ok because the wine will always add an additional note to our already savory stuffed chicken.
