Roasted Lemon-Garlic Potatoes

Who doesn’t love roasted potatoes? And, who doesn’t love lemon-flavored dishes? These roasted lemon-garlic potatoes are SO juicy and delicious, everyone will go bonkers!

Southern Italians and other Mediterranean cultures love lemons because they are abundant and enhance many dishes, like our Flounder Fillets in Lemon Sauce, and Veal Piccata with Lemon and Capers. Ingredients Needed

Baby Potatoes: Look for mini or baby Dutch yellow potatoes and about 2-pound bag.

Olive Oil: Choose a good quality olive oil, as it will make a difference in flavor with these potatoes.

Seasonings: You will need to season these potatoes with some salt, black pepper, garlic powder, dried oregano, and dried parsley.

Garlic Cloves: Fresh garlic crushed or minced are added to them for a pungent flavor that will exceed your expectations.

Lemon: Choose 1 large lemon to juice, and pour it over the potatoes at the end of its roasting time. The lemon will give them a juicy, tangy flavor that is divine!

For this recipe, there are 6-Easy-Steps to making these small potatoes pop with flavor! They are:

Step 1: Rinse the potatoes and slice them in halves. Then place them into a baking pan or baking dish.

Step 2: Scatter all the seasonings over them.

Third Step: Add the crushed garlic to the potatoes.

Step 4: Drizzle olive oil over them, and toss them with a wooden spoon to combine all the ingredients evenly.

  1. Can we double this recipe? Yes, this recipe is very easy to double the ingredients and use a larger roasting pan.
  2. Can we Air-fry them? Currently, I do not own an air fryer, but I believe you can. Just follow the directions on the appliance packaging.
  3. What if we don’t have any fresh garlic on hand? You can increase the amount for garlic powder, and increase it for an additional 1/4 teaspoon.
  4. Can we use any size of potatoes with this recipe? Yes, you can use any size white potatoes you have on hand. Be sure to cut them into quarters, then season them and follow the directions in our recipe card.
  5. How to reheat these potatoes? You can reheat them easily. Just place them into a microwave-safe bowl and reheat for 1 to 2 minutes, until they are warm to your liking. Or toss them into a small baking dish, place them into a preheated oven at 350 degrees F, and reheat for 15 minutes.

Ingredients

  • 2 pounds (24 ounces/680g) small white potatoes (about 12 to 14 small potatoes)
  • 1/2 tsp. salt
  • freshly cracked black pepper
  • 3 Tbsp. extra virgin olive oil
  • 1/4 tsp. garlic powder
  • 2 garlic cloves - crushed
  • 1/4 tsp. dried oregano
  • 1/4 tsp. dried parsley
  • 1 lemon - juiced (about 1/4 cup or more)

Instructions

    1. Reheat the oven to ROAST at 400 degrees F (204C).

    2. Rinse the potatoes, and drain them in a colander.

    3. Slice the potatoes in halves and toss them into a baking dish.

    4. Scatter all the seasonings over them, and drizzle with extra virgin olive oil. Toss them to coat all the potatoes evenly.

    5. Roast on the middle rack for 40 to 45 minutes, until they are golden brown and fork-tender. For extra crispiness, roast for 1 hour.

    6. Next, scatter lemon juice over the potatoes. Stir or toss to combine. Remove from oven and taste one potato, if needed, add additional salt, to adjust the flavor to your taste. Then use a spatula to remove and transfer to a serving platter and serve.
